STEP 1
How to make porridge in jars for the winter? Prepare the ingredients. You can take any cereal. Rice is well suited for vegetable porridge; it goes well with vegetables and makes the porridge lighter, the main thing is to take steamed long rice so that after heat treatment it does not turn into sticky porridge. Wash the carrots, peel and grate on a medium grater.
STEP 2
Peel white cabbage from the top leaves - they are usually dry and dirty. Remove the stalk from the head of cabbage. Chop the cabbage into thin strips.
STEP 3
Wash the bell pepper, remove the core and seeds, and rinse well again under running water. Cut it into small strips with a knife.
STEP 4
Wash the zucchini and cut into cubes. If you use young vegetables, then you don’t have to remove the skin and core of the zucchini. If they are old, then clean them and remove the seeds.
STEP 5
Peel the onions and cut them into halves of rings.
STEP 6
Wash the tomatoes under running water and cut into cubes. If the skin is rough, remove it from the tomatoes by pouring boiling water over them.
STEP 7
Rinse the rice until the water runs clear. Boil it until half cooked in salted water. Drain the water and set the rice aside. Meanwhile, prepare the jars for the preparation. Take small jars (0.5 l) so that a jar of this porridge is one serving for lunch or dinner. Rinse the jars under running water and soda and sterilize them in the oven for 10 minutes at 150 degrees. Wash and sterilize the lids as well.
STEP 8
Place all the vegetables at once into a thick-bottomed saucepan. Add salt and sugar. Stir. Place the pan on the fire and simmer the vegetables for about 30-40 minutes, until half cooked. Then pour in vegetable oil and vinegar, stir and simmer for about 10 minutes. Place rice in a saucepan with vegetables and stir. Turn off the heat and let the pan stand on the stove for about 10 minutes.
STEP 9
Place the porridge with vegetables in jars. Place the jars in a pan with water and a cloth at the bottom, cover the pan with a lid. Sterilize these jars for about 10 minutes. Screw the jars while hot. Leave them to cool upside down at room temperature. There is no need to wrap them, otherwise the rice will boil too much and the vegetables will become too soft. Store the jars in a cold pantry until winter. Bon appetit!
