    How to make a marinade? Wash the mint in running water and dry with paper towels. Chop with a knife. Place the chopped mint in a bowl.

    Wash the lemon using food detergent. Using a grater, remove the colored part of the skin (zest) from the lemon, without touching the white part, as it is bitter. Squeeze the juice from the lemon. Add the remaining ingredients for the marinade to the chopped mint: zest, lemon juice, honey, vegetable oil. nutmeg. paprika, black pepper and salt. Mix everything well. Take liquid, candied honey and melt it. You can change and add spices to your taste.

    Brush the pork with the resulting marinade.

    Use a knife to make deep punctures around the entire perimeter of the piece.

    Place the marinated pork in the refrigerator for 3-4 hours. If possible, it is better to do it at night.

    Place the ham in a baking dish, pour the remaining marinade and mint infusion into the dish.

Then remove the foil and bake for another 35-40 minutes, periodically pouring juice from the bottom of the pan over the meat. I cooked pork with honey in the oven at the dacha. I liked this recipe primarily because of its simplicity. I didn't have all the necessary ingredients, so I had to improvise. Replaced lemon juice with orange juice. For spices I used dried pomegranate, salt and red pepper. I picked mint from the garden. I used flower honey. The oven in my dacha is electric and portable; the temperature in degrees is not marked on it. Therefore, I simply set the switch knob to the average value (I don’t know how hot it got). The meat was cooked for one hour under foil and another 20 minutes without it. The pork turned out very juicy, with a pleasant minty taste and aroma. The orange flavor was also noticeable. Everyone liked the meat, both children and adults. It really turned out wonderful. Thank you very much for the recipe!
