Plum and tomato ketchup
Step-by-step preparation
STEP 1
How to prepare ketchup from plums and tomatoes for the winter? Prepare the necessary ingredients. It is better to take tomatoes that are ripe and juicy. Sterilize bottles or jars in advance in a way convenient for you. Wash the tomatoes under running water and peel them. To do this, make a perpendicular cut in the skin and pour boiling water over the tomatoes. this will allow the skin to come off easily.
STEP 2
Cut the tomatoes into large pieces and place in a thick-walled bowl. I have a clay saucepan. Over medium heat, simmer the tomatoes in their own juice, stirring occasionally. Time may vary, it took me half an hour.
STEP 3
Add onions, pureed in a blender. Stir and cook over low heat for a couple more minutes.
STEP 4
Wash the plums under running water and remove their pits. Using an immersion blender, puree the plums. I have a yellow plum, but blue and red would be just as perfect here.
STEP 5
Pour the plum puree into a saucepan. Stir the mixture.
STEP 6
Add seasonings for aroma and taste. Simmer the sauce over low heat until thickened. It took me about 10 minutes. The sauce will splatter. But you can’t cover it with a lid: the liquid should evaporate and not collect inside. You can cover the saucepan with a special mesh lid to prevent splashes.
STEP 7
But I don’t have one, so I just covered the saucepan with a metal colander. Thanks to this, the steam comes out in the same way, and the splashes remain inside.
STEP 8
When the onion is boiled, place the sauce in a metal colander and rub it with a spoon, removing the seasonings.
STEP 9
The more thoroughly you rub the ketchup, the more of it you end up with. I only have 1 tbsp left. cake. It needs to be thrown away.
STEP 10
Now the ketchup is homogeneous. Return it back to the saucepan over low heat, add salt and sugar. Do this in batches, stirring and tasting so as not to overdo it. All that remains is to stir the ketchup to the desired thickness within a couple of minutes.
STEP 11
When you are completely satisfied with the consistency of the ketchup, remove it from the heat and add vinegar.
STEP 12
Stir and pour ketchup into prepared bottles.
STEP 13
Close with lids, turn over and wrap until cool. Happy cooking and bon appetit!
