Pie with sorrel in the oven

Step-by-step preparation
STEP 1
How to bake a sorrel pie in the oven? Prepare the products according to the list. Take eggs at room temperature, you can use sour cream of any fat content (I used 20%). You can replace baking powder with baking soda. If desired, you can also add cinnamon to the filling.
STEP 2
Rinse the sorrel thoroughly with cold water and dry.
STEP 3
Melt the butter in a water bath or in the microwave and let it cool.
STEP 4
Break the eggs into a bowl, add sour cream, sugar and a pinch of salt. Wash the eggs with soda first, as there may be harmful bacteria on their surface.
STEP 5
Mix everything until smooth.
STEP 6
Sift the flour and baking powder through a sieve into the resulting mass, keep in mind that you may need less or more flour than indicated in the recipe, focus on the desired consistency of the dough.

Knead a soft elastic dough that does not stick to your hands, wrap it in a bag and put it in the refrigerator for about 20 minutes.
STEP 8
Meanwhile, chop the sorrel with a knife and place in a bowl.
STEP 9
Add sugar and a pinch of salt, mix and knead a little with your hands.
STEP 10
Add starch and mix again.
STEP 11
Lay out the cottage cheese. If you have grained cottage cheese, first rub it through a sieve or punch it with a submersible blender.
STEP 12
Mix the resulting mass well.
STEP 13
Divide the prepared dough into two parts, roll most of it into a circle and place it on the bottom of a baking dish, greased with oil (I have a mold diameter of 18 cm). Make edges and small holes with a fork.

Place the prepared filling on top of the dough.
STEP 15
Roll out a smaller part of the dough into a circle and cover the filling with it and pinch the edges, make cuts in the middle of the dough to allow steam to escape, if you wish, you can decorate the pie to your taste (I sprinkled additional sugar on the top of the pie).
STEP 16
Bake the pie with sorrel and cottage cheese in an oven preheated to 180 degrees for about 50-60 minutes. Time and temperature are approximate, select individually, taking into account the characteristics of your oven. Check readiness with a wooden skewer, insert it into the middle of the pie, if it comes out dry, then the baking is ready. Remove the finished pie from the mold, cool slightly and serve, cutting into portions. Enjoy your tea!
