    Let's prepare a sponge cake! Beat 3 eggs into a bowl and add 250 grams of sugar. Beat with a mixer until a fluffy light mass. Pour 50 milliliters of strong coffee and 180 milliliters of kefir into the egg mixture. Add 100 grams of soft butter and mix with a mixer until smooth.

    Pour one and a half teaspoons of baking powder into 280 grams of flour and sift 80 grams of cocoa through a fine sieve. Mix until smooth.

    Pour dry ingredients into liquid mixture. Mix and beat with a mixer until smooth. The dough is ready!

    Let's bake the pie! Place the finished dough in a mold with a diameter of 22 centimeters and carefully level it with a spatula. Place the pie in a preheated oven to 190 degrees and bake for 35 minutes. Check readiness with a toothpick or wooden skewer. Let the finished pie cool completely and cut the pie into 2 parts.

    Let's start soaking! Pour 200 milliliters of water into a saucepan, add 3 tablespoons of sugar and 1 teaspoon of coffee. From the total amount of coffee drink, pour 6 tablespoons for glaze. Stir and put on fire until the sugar is completely dissolved. We soak each half of the cake well with the coffee impregnation.

    Let's make the glaze! Pour 6 tablespoons of prepared coffee into a saucepan and add 4 tablespoons of sugar. Add 3 tablespoons of cocoa and 20 grams of butter. Place on the fire and cook until a homogeneous, smooth mass.

    Assemble the pie! Coat the bottom of the pie with the finished glaze, cover with the second part and coat the top and sides of the pie with the remaining coffee impregnation. Pour the rest of the glaze on top and spread with a spoon over the entire pie. Place in the refrigerator for 1-2 hours until the glaze completely hardens. Ready-made pie cut and serve. I made it according to the recipe, but... the recipe was a little unclear for me, and I figured out how much coffee myself :) so it turned out with errors, which I tried to correct with the help of cream. So, first of all, I bought bird cherry flour and decided to try it in this cake, instead of 1 tsp. coffee and 200 ml of water, I made a mistake and put 6 tbsp. coffee per 50 ml of water. I made the impregnation from 1 tsp. coffee, water 30g. and cognac 20 g. When I realized that I had completely screwed up here, both the biscuit and the impregnation with bitterness, I decided to make a cream from butter and condensed milk in order to soften the brutality of my cake.
