STEP 1
How to make pea soup with smoked ribs and chicken? Prepare your food. Start with peas: sort dry peas, rinse and soak in cold water for 2 hours, if split peas, overnight if whole. Before preparing the soup, drain off any unabsorbed water and rinse the peas under running water. Wash and peel the vegetables.
STEP 2
Rinse the chicken, cut the ribs along the bones. Place in a mesh container for broth: 1/2 onion, 1/4 carrot, 6 black peppercorns, 1 clove of garlic, dill and parsley stems. Place meat, ribs, mesh with spices in the pan, fill everything with cold water. If the peas are whole, then put them in now. Let the broth boil, skim off the foam, reduce the heat to low and leave to simmer covered for 30-40 minutes. DO NOT SALT!
STEP 3
Peel and cut the carrots and sausage into strips, onions, garlic, herbs into small pieces, and potatoes into medium cubes.
STEP 4
After time has passed, remove the finished meat and the mesh with spices, and add the peas (if they are split) into the boiling broth. Skim off any foam that appears, reduce heat and cook the soup for about 20-30 minutes until the peas are almost done. DO NOT SALT, as salted water will take longer to cook the peas.
STEP 5
Prepare the frying: fry the onion in a frying pan in heated vegetable oil until transparent.
STEP 6
Add to the onion and fry the sausage.
STEP 7
Then carrots. Now you can also add tomato or tomato paste (with them the soup will turn out a beautiful orange color).
STEP 8
Separate the cooled meat from the skin and bones, cut it as desired (as you would like to eat it in soup).
STEP 9
Try the peas; if they are almost ready, add the potatoes.
STEP 10
Next, add the chopped meat, frying and just now add salt (considering that the ribs and sausage are already salted). Cook the soup for about 10 minutes until the potatoes are ready - when pressed with a spoon, they should break easily.
STEP 11
3-5 minutes before it is ready, taste the soup for salt, add it if necessary. Add bay leaves, garlic, fresh or dried herbs to taste, pressed through a press. Turn off the stove and let the soup sit for 10-15 minutes with the lid closed.
STEP 12
Serve the soup to the table. Bon appetit!
