Pancakes with sour milk with holes

If the milk has turned sour, don’t rush to throw it away - bake some pancakes. Sour milk can be replaced with yogurt. It is more viscous, so the pancakes will turn out fluffier and softer. The pancakes turn out very beautiful - crispy, with many small holes.

I made pancakes with sour milk with holes. This was my first time trying to make pancake batter this way. Some of the total amount of milk I had was sour to the state of kefir, the other part still had the consistency of milk, but had already curdled when boiled. I mixed everything when weighing. The dough turned out homogeneous and very liquid. At first I even thought that I would have to add flour. But I tried baking it and it turned out well. During cooking, I made pancakes of different thicknesses - the thinner ones came out with a lot of holes, the thicker ones were easier to turn over in the frying pan. By the way, I had to bake these pancakes much longer until they were ready than regular ones. The pancakes turned out to be greasy (next time I’ll try to add one tablespoon less vegetable oil to the dough, although taking into account the fact that the dough is made with sour milk, it probably needs a lot of oil). As for the taste, I really liked these pancakes! They are different from those baked with regular milk, not that they are better or worse - they are just different, more moist, heavier, and very filling. We ate them without any toppings or toppings with sweet tea! It turned out to be a very tasty breakfast! I will use this recipe again, especially if the milk turns sour))) Thank you!

Hello. They turned out delicious. Only during baking did the first ones burst and the rest were already baked normally. Vanillin is not felt at all. I think you can do without it and I would add more sugar.
