  1. STEP 1

    STEP 1

How to make pancake cake? Prepare your ingredients. They should be at room temperature. Take premium flour, sift it through a fine sieve to saturate it with oxygen.

  2. STEP 2

    STEP 2

Pour the flour into a deep bowl. Add sugar and a pinch of salt, stir. Make a hole in the center of the flour mound and crack 2 eggs into it. Stir until smooth.

  3. STEP 3

    STEP 3

Pour milk into a bowl in small portions and knead the dough. Leave the finished dough for 20 minutes to rest.

  4. STEP 4

    STEP 4

In the meantime, start preparing the cream. Prepare all the products for him. It is better to take cottage cheese that is not too dry and not coarse-grained.

  5. STEP 5

    STEP 5

Press the curd through a fine sieve once or twice. You should get a fine-grained mass.

  6. STEP 6

    STEP 6

Beat soft butter with powdered sugar until fluffy. It is better to do this with a mixer or blender.

  7. STEP 7

    STEP 7

Add the grated cottage cheese to the butter in several batches and beat the whole mass until smooth. The cream turns out airy and delicate.

  8. STEP 8

    STEP 8

Add melted butter to the rested dough. You can melt the butter in the microwave. Stir the dough.

  9. STEP 9

    STEP 9

Fry thin pancakes in a well-heated frying pan (preferably cast iron) on both sides until cooked. Before the first pancake, be sure to grease the frying pan with a thin layer of oil (vegetable or butter, at your discretion). Let the finished pancakes cool slightly. To do this, I simply lay them out in one layer on a large board.

  10. STEP 10

    STEP 10

Form a cake from the cooled pancakes. To do this, simply brush each pancake with a layer of cream, stacking them on top of each other. Leave a little cream for the sides and top.

  11. STEP 11

    STEP 11

For decoration, use whatever fresh or canned berries you find. I used raspberries, strawberries, mulberries and some blueberries. In fact, we will need much fewer berries than in the photo :)

  12. STEP 12

    STEP 12

Decorate the pancake cake to your liking. Instead of berries, you can pour chocolate glaze over it and sprinkle with coconut flakes.

  13. STEP 13

    STEP 13

Before serving, it is advisable to let the cake sit in the refrigerator so that the cream sets and the cake is easy to cut. Help yourself!

When it was Maslenitsa, I thought that mine was tired of just eating pancakes with different fillings, I decided to make this cake according to your recipe, the only thing I added was not 2 eggs, but 3, and not 300 ml of milk, but 400 ml. We just love very thin pancakes. I prepared the filling exactly as you did. The cake turned out to be quite big. I thought it would be enough for a few days, but that was not the case, I just managed to put it in, looked around and everyone ate it. Now they're asking for more. I will continue to study your recipes

I think the cake turns out tender and soft, and the fruits add freshness and a wonderful smell. Buttercream goes very well with this cake, I liked it))) Thank you, I will make it after the post.

This is beauty! I love pancake cakes - they are delicious, filling and healthy! Such a quantity of berries - it’s simply drooling! It's so delicious! Blackberries, blueberries, raspberries go very tasty with pancakes. And if you soak the pancakes with these berries, it will be difficult to tear yourself away! Thanks for the recipe!

I join the enthusiastic reviews, such a culinary creation is very tasty and satisfying, and most importantly, unusual. Banana cake with walnut glaze is prepared using the same principle; the deliciousness is indescribable. Perhaps a small drawback of cakes made from fresh berries is the possibility of staining your clothes with stains that are not easy to wash off. So we all put on bibs and enjoy the tea party))

Thanks for the recipe and the idea! Easy (standing at the stove frying pancakes doesn’t count), clear, simple! Pancakes in an envelope, a tube - this is no longer interesting! And here's the cake! A completely different perception. You can prepare pancakes according to your own signature recipe, but for the first time, make the filling as in the recipe. I always make a dish exactly the same as the recipe for the first time. And then you can experiment!

I love this cake and my daughter loves it too. I cook at home very often. There’s nothing difficult and there’s no need to fuss with it. The taste is divine. Plus, pancakes are my favorite dish, plus fruit. I tried replacing raspberries with strawberries, it turned out very tasty!
