Painting Easter gingerbread cookies with colored glaze

STEP 1

We make toppers or just gingerbread cookies for Easter. I already have the dough ready. You can take your favorite recipe. I have my own recipe, below is a link to it. So, we take the dough out of the refrigerator. We let him lie on the table for half an hour. Because it's hard at first.
STEP 2

Let's prepare molds for cutting out gingerbread cookies. I had these.
STEP 3

Cut off a piece of dough. We knead it in our hands. And roll it out to a thickness of 6 mm. My rolling pin is already set to a height of 6 mm.

We squeeze out our figures with molds.
STEP 5

Remove excess dough.
STEP 6

You can leave it like that on the mat. In general, it is recommended to do so. That is, roll out a large layer of dough and squeeze out all the figures at once. But we must maintain a distance between them.

It is not advisable to move gingerbread cookies. But this is not the first time I’ve done this, I’ve gotten the hang of it. And this is what they will look like. Our oven is preheated to 200 degrees. Let the gingerbread cookies bake. It takes me exactly 10 minutes.

This is how they turn out. If you overbake them, the gingerbread cookies will be dry; if you don’t bake them, they will be raw. So try to find the middle. Maybe 8 minutes is enough for you. It may take 15. Always rely on your oven, everyone's oven is different.
STEP 9

I immediately press them down lightly with a board. So that they are even. But you don't have to do that. You can paint them on the other side, where they are even.
STEP 10

Immediately, when they are still hot, we take toothpicks or wooden skewers and carefully screw them into the gingerbread cookies. And so we leave them to cool further. Some stick toothpicks right in front of the oven. It can be this way or that.
STEP 11

For the glaze, weigh the egg whites and powdered sugar. If you need a little frosting, how to calculate? Take, for example, 1 protein, weigh it and multiply this figure by 5.5. The resulting number is the weight of your powdered sugar. I always have the dough in the refrigerator, wrapped in cellophane. If I need gingerbread for a cake, I cut off a piece and bake it. And then I make glaze, sometimes even with half the egg white.

Sift the powdered sugar into the whites. And stir everything with a spatula.
STEP 13

Next, beat with a mixer at medium speed for 5 minutes. There is no need to beat vigorously. Halfway through the process, add our lemon juice. This is for the whiteness of the glaze, and for the taste. Some people don't add. This is what the icing will look like.

Now cover our mixer bowl with a damp towel. Let's leave it like that for half an hour. We need this so that excess air bubbles come out. We definitely do this!
STEP 15

While our glaze is resting, let's prepare what we will need next. These are small cups, teaspoons, disposable bags, very cold water, a needle or toothpick.
STEP 16

Now let's color our glaze. I have gel dyes. Place some glaze in a cup. First add a drop of dye or dip a toothpick in the dye. This is sometimes enough. Let's stir. Next, add water drop by drop. Here you need to look at what you will do.
STEP 17

To fill the gingerbread, we need such a consistency that if we run a spoon over the icing, there will be a groove like this. Now we calculate how long it will take for it to disperse. Lightly shake or knock the cup. To fill, we need to count to 5. If the glaze has spread, then water is enough. For a more rigid contour, count to 10. Of course, the video is much clearer, but I will try to explain in words.
STEP 18

This way we will prepare different colors. Please note that the icing in the cup is covered with a damp towel all this time. Because it dries quickly.
STEP 19

I do the outline first. To do this, I take nozzle 0. Everything we have next is white, the outline is also white.
STEP 20

Now the main stage. Filling. We do this in a circle. We help with a needle along the edges.
STEP 21

Now we tap or shake from side to side. The glaze will disperse. If there is not enough glaze somewhere, then add a drop. And I immediately draw the picture in a different color. Also, when you work with bags of icing, you should cover them with a damp towel each time. So that they don't dry out.
STEP 22

To make the glaze smooth and dry quickly, put the sheet in the oven for 10 minutes at 50 degrees. With the door open, it is possible with a fan.

And this is how gingerbread cookies turn out. Well, it's all up to your imagination.

Let our toppers dry completely. I leave them on the counter for at least 8 hours. Then you need to put it in bags or some kind of container with a lid. I made these painted gingerbread cookies for Easter.
