  1. STEP 1

    STEP 1

How to make Ossetian pie with cheese and herbs? Prepare the necessary ingredients for this. Sift the flour through a sieve in advance to saturate it with oxygen. Any greens can be used. I take green onions.

  2. STEP 2

    STEP 2

To prepare the dough, heat the milk and add dry yeast, sugar and salt.

  3. STEP 3

    STEP 3

Gradually add sifted flour and knead the dough. You may need a little more or less flour than indicated in the recipe, so use the consistency of the dough as a guide.

  4. STEP 4

    STEP 4

The finished dough is soft, elastic and almost does not stick to your hands. To avoid filling the dough with excess flour, at the end of kneading, grease your hands with vegetable oil and knead the dough with your hands. Cover the finished dough with a towel and put it in a warm place for 1 hour to rise.

  5. STEP 5

    STEP 5

To prepare the filling, grate two types of cheese on a coarse grater. Add chopped herbs to the cheese. Add salt to taste and mix everything.

  6. STEP 6

    STEP 6

Roll out the risen dough into a circle and lay out the filling, not reaching the edges. I have quite a lot of fillings. It tastes better for us.

  7. STEP 7

    STEP 7

Gather the edges of the dough in the center and pinch well.

  8. STEP 8

    STEP 8

Turn the cake over, seam side down, and roll it out slightly with a rolling pin into a circle, approximately 30-35 cm in diameter. Make a small hole in the center of the cake to allow steam to escape. Place the cake in the oven, preheated to 180 degrees, for about 30 minutes. When baking, use your oven as a guide.

  9. STEP 9

    STEP 9

The cake will turn a delicious golden color. Remove it from the oven and immediately brush it with butter while still hot. You can treat yourself right away. Bon appetit!

This recipe made the dough soft and tender. For a brighter taste, I would advise adding the white of one egg to the recipe (to make one pie, using the gram of this recipe), and I greased the top of the pie with the remaining yolk and a teaspoon of sour cream. The filling turned out to be slightly salty, just the way I like it. You can use any greens, I added dill, a little parsley and the same amount of chopped green onions. And the dough works well with compressed yeast; I prefer to make dough with it. I note the simplicity of the recipe, budget ingredients for cooking and the dish itself is hearty and tasty.

Ossetian pies are especially delicious and today I tried to cook it according to your recipe. There is no point in talking about how delicious it turned out, you just need to try it. Delicious! My pie scattered instantly. I replaced Adyghe cheese and hard cheese with suluguni. Greens - dill and green onions. I also added sour cream to the filling.
