STEP 1
How to make an omelette with zucchini and tomatoes in a frying pan? Very simple! To begin, prepare the necessary ingredients according to the list. Take large, selected eggs. If the eggs are small, take one more. You can take both regular, pale green zucchini and zucchini. In addition to parsley, you can use other greens - dill, cilantro, etc.
STEP 2
Break the eggs into a bowl and mix with a whisk until the whites and yolks combine.
STEP 3
Wash the zucchini thoroughly. If the vegetable is young, then leave the skin and seeds; if it is old, remove it. I had a baby zucchini, so I just gave it a good scrubbing with a brush. Cut the zucchini into small cubes.
STEP 4
Wash the tomatoes, cut into quarters and remove the wet core with seeds, leaving only the pulp. To prevent tomatoes from spreading during cooking, choose fruits that are strong but ripe.
STEP 5
Cut the remaining tomato pulp into small pieces.
STEP 6
Finely chop the garlic and parsley with a knife. You can replace fresh parsley with 1 tsp. dry garlic.
STEP 7
Heat 1 tbsp in a frying pan. l. vegetable oil. Add the zucchini and fry over medium heat, stirring, for 7-8 minutes. The zucchini should become softer.
STEP 8
Add the tomatoes, garlic and some of the herbs to the zucchini and fry over high heat, stirring, for 1 minute.
STEP 9
Place the fried vegetables in a bowl with the beaten eggs and stir immediately. To prevent the eggs from curdling from the heat, cool the vegetables slightly before adding them. Immediately add salt and pepper to taste and stir.
STEP 10
Heat the remaining vegetable oil in a frying pan. Pour the omelette and vegetable mixture into the pan. Sprinkle some more chopped herbs on top.
STEP 11
Fry the omelette over low heat, covered, for 5-10 minutes. Make sure that the bottom does not burn and that the top is properly set. After all, the omelette turns out to be thick. What should you do if the bottom of the omelette begins to burn, but the top is not yet ready? You can simply turn off the heat and leave the omelette to rise in a hot frying pan or on a cooling stove, if it is electric. Or, if the frying pan allows it, place the frying pan without a lid in the oven under moderate upper heat (grill)
STEP 12
Sprinkle the finished omelette with the remaining parsley or other herbs and serve. Bon appetit!
