Okroshka with mineral water

Refreshing, so delicious! The best option for a summer lunch! Okroshka is a favorite cold soup made from fresh vegetables and herbs. Just as every housewife has her own version of borscht, everyone makes okroshka in their own way. I suggest trying okroshka with mineral water.

  1. STEP 1

    STEP 1

How to make okroshka with sausage using mineral water? Prepare all the necessary ingredients. Take boiled sausage, without fat, you can also take ham, sausages or boiled meat. In addition to parsley and dill, you can add a bunch of green onions. You will need mineral water with gas. Pre-boil the eggs and potatoes and cool. Also prepare a deep bowl for okroshka.

  2. STEP 2

    STEP 2

In my family, we always added potatoes to okroshka, peeling them and frying them on all sides until golden brown. Small potatoes are suitable for this. I don’t cut potatoes into okroshka. But if desired, potatoes can be cut in the same way as sausage. Peel the eggs and cut them. Cut the sausage into cubes. Wash fresh cucumbers, dry and grate on a coarse grater.

  3. STEP 3

    STEP 3

Wash the fresh herbs, shake off excess liquid and chop finely. In a deep bowl, mix the chopped fresh herbs and salt and mash everything together.

  4. STEP 4

    STEP 4

Add chopped sausage, eggs, cucumbers to the greens and mix everything.

  5. STEP 5

    STEP 5

Add mayonnaise, sour cream, mustard. Mix everything again. You can add ground black pepper to taste, but I usually don’t add it to okroshka.

  6. STEP 6

    STEP 6

Pour in sparkling mineral water little by little. Taste it. If the okroshka seems too bland, you can add the juice of half a lemon or apple cider vinegar. Cool the okroshka before serving.

  7. STEP 7

    STEP 7

Serve the finished okroshka chilled. I usually pour a portion of okroshka into a plate and lay out 2 - 3 fried potatoes, depending on the taste and size of the potatoes. Bon appetit!

It’s interesting to try, but not even because of the mineral water; I’ve never cooked with anything in my life, but I certainly haven’t done it with whole and even fried potatoes. I always just cut it. Curious to try a new option for me! Whatever the taste will be, you might like it too. Thanks Anna for the idea!

Today we had sunny, warm weather and I decided to make okroshka. Just out of habit, I boiled the potatoes, did not add mayonnaise, but used kefir instead, and then everything was according to the recipe (added a little lemon juice). It turned out very tasty and fresh for summer! Anna, thank you very much! Next time I'll definitely try it with fried potatoes.
