New Year's stuffed cockerel in the oven

Step-by-step preparation
STEP 1
Prepare all ingredients in advance. Wash, clean and remove excess what needs to be done. Let the rice cook.
STEP 2
Cut the onion and bell pepper into strips, and the mushrooms into slices. Fry everything in half the olive oil, salt and pepper to taste. After frying, pour the oil into a glass.
STEP 3
Mix fried vegetables with boiled rice. Stuff the rooster with rice and vegetables.
STEP 4
Place the rooster on a baking dish. Add fresh oil and salt to taste to the oil remaining after frying, mix and coat the rooster well with this. All this can be done in advance and leave the rooster in the refrigerator until baking.
STEP 5
An hour before serving the dish, preheat the oven to 220 degrees. Add a little water to the bottom of the pan and bake the cockerel for 40 minutes. From time to time, pour the broth from the bottom of the pan over the rooster - this helps to form a juicy, not overdried crust.
STEP 6
Then reduce the heat and let the oven cool to 180 degrees. Meanwhile, cut the apples into large cubes and place them on the bottom of the pan. Bake the cockerel for another 30 minutes at 180 degrees. The rooster is ready and you can serve it straight from the oven! Therefore, choose a more beautiful baking dish. Bon appetit and happy holidays!
