    Wash and cut fresh champignons into slices. Fry the mushrooms in a frying pan, evaporating the water from them.

    While the mushrooms are frying, prepare the dough for the potato gnocchi. Grate the cooled potatoes on a fine grater. Add flour to the resulting mass and mix thoroughly. The dough should be pliable and not stick to your hands. Add some salt and crush it into a ball. You may need a little less or more flour; read more about the properties of flour in the article at the end of the recipe.

    Add 1.5 tbsp to the pan. spoons of sunflower oil and fry the champignons a little more until lightly browned. As soon as the mushrooms are fried, add them to the meat broth and cook over medium heat.

    We divide the gnocchi dough into several parts (I have 4), each of which we roll out into thin sausages 1.5-2 cm in diameter.

    We cut all the sausages crosswise with a knife into discs 1-1.5 cm wide. Turn each disc over with the cut side down, lightly pressing it with your finger in the center.

    In the frying pan where the mushrooms were fried, fry in 2 tbsp. spoons of sunflower oil 1 tbsp. spoon of flour. Mix well, add ground black pepper and nutmeg.

    Pour in 2 ladles of meat broth and bring to a homogeneous consistency.

    Then pour the flour mixture into the soup. Mix thoroughly.

    Salt the soup and add gnocchi 2 minutes before the end of cooking. The soup should not boil, otherwise the gnocchi will soften and turn into puree. Then immediately remove the pan from the stove.

    Carefully pour the soup into bowls, making sure that the gnocchi do not become deformed. Sprinkle each serving of soup with chopped dill. You can add a spoonful of sour cream or cream. Mushroom soup with meat broth is ready. Bon appetit!

I wanted to make mushroom soup with meat broth. The broth was made from chicken soup. I didn’t boil the potatoes for the gnocchi separately; I peeled the tubers, washed them and added them whole to the pot with the soup set. I boiled the potatoes until soft, then took them out of the broth, mashed them with a potato masher, added salt and flour, and kneaded the potato dough. I formed gnocchi from it, boiled them separately (dipped them in small portions into boiling salted water, took them out as soon as they floated to the surface), put them in a small saucepan, sprinkled them with sunflower oil and stirred carefully so as not to stick together. I had forest mushrooms, frozen. I fried them, added them to the prepared broth, and in the same frying pan made flour frying with black pepper and ground nutmeg. I also added the roast to the broth. When serving, the gnocchi was placed in portions on plates, poured with broth with mushrooms, and sprinkled with broth. If desired, cream was added to the soup. The result was a very tasty mushroom soup, aromatic, with tender gnocchi. We had lunch with great pleasure! Thanks for the recipe, sweet tooth mom

An interesting option for potato dumplings, but I’m afraid that I won’t have time to pull them out in time and they will boil, or if I don’t eat the soup right away, they will fall apart in mashed potatoes, maybe add an egg to be sure? Wonderful soup with mushrooms, I think if you cook it with wild mushrooms it will be very flavorful! I’ll definitely try to cook it as soon as I get my hands on the mushrooms!
