Mushroom soup with meat broth

STEP 1
How to cook mushroom soup in meat broth? Necessary products. I didn’t take a photo of the saucepan with the broth. Thoroughly clean the potatoes from dirt under running water and boil them in a separate pan in their skins in salted water for 20 minutes. As soon as the potatoes are ready, cool them and peel them. We also clean the mushrooms, thoroughly washing them and the greens. Sift the flour. How to choose a pot for the soup, read the article at the end of the recipe.
STEP 2
Wash and cut fresh champignons into slices. Fry the mushrooms in a frying pan, evaporating the water from them.
STEP 3
While the mushrooms are frying, prepare the dough for the potato gnocchi. Grate the cooled potatoes on a fine grater. Add flour to the resulting mass and mix thoroughly. The dough should be pliable and not stick to your hands. Add some salt and crush it into a ball. You may need a little less or more flour; read more about the properties of flour in the article at the end of the recipe.
STEP 4
Add 1.5 tbsp to the pan. spoons of sunflower oil and fry the champignons a little more until lightly browned. As soon as the mushrooms are fried, add them to the meat broth and cook over medium heat.
STEP 5
We divide the gnocchi dough into several parts (I have 4), each of which we roll out into thin sausages 1.5-2 cm in diameter.
STEP 6
We cut all the sausages crosswise with a knife into discs 1-1.5 cm wide. Turn each disc over with the cut side down, lightly pressing it with your finger in the center.
STEP 7
In the frying pan where the mushrooms were fried, fry in 2 tbsp. spoons of sunflower oil 1 tbsp. spoon of flour. Mix well, add ground black pepper and nutmeg.
STEP 8
Pour in 2 ladles of meat broth and bring to a homogeneous consistency.
STEP 9
Then pour the flour mixture into the soup. Mix thoroughly.
STEP 10
Salt the soup and add gnocchi 2 minutes before the end of cooking. The soup should not boil, otherwise the gnocchi will soften and turn into puree. Then immediately remove the pan from the stove.
STEP 11
Carefully pour the soup into bowls, making sure that the gnocchi do not become deformed. Sprinkle each serving of soup with chopped dill. You can add a spoonful of sour cream or cream. Mushroom soup with meat broth is ready. Bon appetit!

This is what ready-made gnocchi looks like. TIP: You can cook gnocchi not in broth, but in a separate pan in salted water, place in a serving plate and pour over mushroom soup in meat broth. I specifically boiled gnocchi not in broth, but separately, because I knew that all portions of soup will not be eaten at once.
