STEP 1
How to cook mushroom soup from fresh honey mushrooms? Prepare your ingredients. It is better to take honey mushrooms for this soup that are not large, so that they can be left whole, then it will not only be tasty, but also beautiful. You can increase the set of vegetables if you wish. You can also add pasta or cereal to the soup, then it will be even more nutritious and satisfying.
STEP 2
Clean the honey mushrooms well from soil, debris and rinse under running water. Place them in a saucepan, cover with clean water, add salt and boil for about 30 minutes. Then drain the water in which the mushrooms were boiled. Cover the mushrooms with fresh water. Put it back on the fire.
STEP 3
Meanwhile, prepare the vegetables for the mushroom soup. Peel the onions and chop finely.
STEP 4
Peel the carrots and grate on a medium grater.
STEP 5
Heat vegetable oil in a frying pan. Place the prepared onions and carrots in it. Fry the vegetables, stirring, over medium heat until golden.
STEP 6
Wash the potatoes, peel and cut into small cubes.
STEP 7
Place the roasted vegetables from carrots and onions into the pan with honey mushrooms. Add chopped potatoes. Bring to a boil, reduce heat to medium. Salt to taste and add black peppercorns. Cook the soup for about 20 minutes. Add a bay leaf, it will make the mushroom soup especially aromatic. Cook for about 5-7 minutes more. Then turn off the heat, but leave the soup on the stove, covered, to simmer for about 15 minutes.
STEP 8
If you wish, you can add finely chopped dill and parsley to the soup; they will also enhance the taste of the soup and make it more aromatic. Then pour the mushroom soup into bowls and serve. You can serve it with sour cream, fresh herbs, garlic and rye bread. It turns out very tasty. Bon appetit!
