Moldavian vertuta with pumpkin and cabbage
Ingredients

Add 1/2 tsp to the water. salt.

Then add apple cider vinegar to the water.

And 2 or 3 tablespoons of vegetable oil. Mix thoroughly.

We take the sifted flour, make a well in the middle and pour out the water to which we have added salt, vinegar and vegetable oil.

After this, carefully knead the stiff dough.

Then form a ball of dough and cover it with a towel for 15 minutes. The gluten will swell and the dough will be more pliable.

After the dough has rested, dust the work surface with flour and knead for 2-3 minutes.

Now we form a flagellum from the dough and cut it into 8 parts, since we will get 8 twirls.
STEP 9
I cut by eye as I will then weigh each piece on my home kitchen scale.
STEP 10
We form balls from the pieces. One ball should weigh approximately 64-66 grams.

Place the dough balls on a floured table and cover with a towel for 30 minutes.

The dough became very soft and pliable. First you need to knead the dough a little.

Then roll it out with a rolling pin as thin as possible.

After this, lubricate the sheet with vegetable oil over the entire surface.

Transfer to a plate greased with vegetable oil and do the same with the remaining dough circles.

For the sweet filling I use grated pumpkin and added sugar to taste. If desired, you can also add cinnamon and vanilla sugar. For the usual filling we will need stewed cabbage with mushrooms. The cabbage should be salted and pepper to taste. Fry it in a frying pan and add champignon mushrooms while frying.

Place the sheet of dough on a work surface greased with vegetable oil and stretch it as best as possible, but be careful so that the dough does not tear.

Then we bend one edge.

And lay out the filling - cabbage with mushrooms.

And sweet filling with pumpkin.

After this, you need to very carefully and carefully wrap the filling in the dough.

You can twist the dough a little and then form the vertuta.

I place all the twirls on a baking sheet, on parchment paper and brush with beaten egg and milk. Bake them for 30 minutes at 190 C and then 10 minutes at 200 C until they are nicely browned on top.
