For cutlets, you can use store-bought minced meat, but I prefer to make cutlets from minced meat prepared at home. In this case, the meat can be any - beef, pork, chicken, turkey. Just keep in mind that different types of meat will have different cooking times. Take any cheese, both hard and soft, the main thing is that it melts well and is tasty.

    How to make minced meat? Wash the pulp (I used pork), cut into pieces and pass through a meat grinder with a fine grid. Place the minced meat in a bowl and break an egg into it. Wash the egg first so that dirt does not get into the minced meat.

    Season the minced meat with salt and pepper, stir until smooth.

    To prevent the cutlets from falling apart and keeping their shape, beat the prepared minced meat. To do this, gather the minced meat in your hand, lift it above the bowl and throw it back. Do this 10-15 times. At the end, you will feel the minced meat thicken and become more elastic.

    Grease a thick-bottomed baking dish with a small amount of vegetable oil. Form the minced meat into cutlets, I got four of them, and place them in the mold. Make a long strip along the cutlets. The shape should be slightly larger than the cutlets.

    Prepare the gravy. How to make gravy? Place a heavy-bottomed frying pan over medium heat. Put the butter and melt it. Sift wheat flour into the pan. Flour can be taken of the highest or first grade.

    Add milk little by little, stirring well each time until smooth. Do not pour in the milk all at once; it will be very difficult to turn everything into a homogeneous mass.

    Wash the greens and chop finely. Add it to the pan with the gravy. It can be dill, parsley, cilantro, any to your taste.

I made minced meat cutlets in the oven with cheese for lunch. I prepared the minced meat myself, grinding the pork with a blender, it turned out to be 250 g. I added egg and salt to the minced meat, mixed and formed cutlets with longitudinal indentations, I got 4 of them, put them in a baking dish. Then I got to work on the gravy and made it my own way. I diluted the flour in a small amount of milk, then combined it with the remaining milk, poured it into a frying pan greased with butter, brought it to a boil, and kept it on the fire for 2 minutes. Then I added finely chopped dill (I had frozen) and poured it into the form with the cutlets. Topped each cutlet with grated cheese. I baked the cutlets in the oven for 40 minutes at 220°. The cheese crust turned out so appetizing that I wanted to try the cutlets as soon as possible. They were well baked inside and came out soft and juicy. I served them with mashed potatoes, flavored with aromatic gravy. It turned out delicious! I will make these cutlets again, but with a double portion of gravy! Thank you very much for the recipe!
