Millet porridge pancakes
Ingredients
Step-by-step preparation
STEP 1
How to make pancakes from millet porridge? Prepare your food. You can either cook millet porridge, or use ready-made porridge left over from yesterday's meal. Read more about the intricacies of choosing millet in a separate article, link at the end of the recipe. I'll cook. The amount of flour is approximate; it may take more or less, depending on the thickness of the porridge. You can omit raisins at all or use nuts, fruits, and berries instead.
STEP 2
Cook the porridge. How to cook millet porridge? Rinse the millet thoroughly until transparent in several waters. Place it in a saucepan and fill it with clean cold water. Add a pinch of salt. Place the saucepan on the stove over medium heat. After boiling, reduce the heat and cook the porridge, stirring, until tender, 15-20 minutes. The cereal will absorb almost all the water.
STEP 3
When this happens, remove the ladle from the stove. And immediately pour milk into the porridge. Leave it to stand for 15 minutes. During this time, the millet will absorb part of the milk, and the porridge itself will cool down a little. I cooked porridge in the evening and fried pancakes in the morning. This is also possible, very convenient.
STEP 4
Prepare the raisins. How to steam raisins correctly? Pour hot water over the well-washed raisins and leave for 10-15 minutes. During this time it will become soft. Drain and pat dry with paper towels.
STEP 5
Place the porridge in a bowl and crack the egg into it. Add sugar, a couple of tablespoons of flour and baking powder. Do not add all the flour at once, check the thickness of the porridge. Depending on the quality of flour, you may need a little more or a little less. You can read more about flour and its properties in a separate article, link at the end of the recipe.
STEP 6
Stir the dough, it should turn out like regular pancakes. Add more flour if necessary. Then add the dried raisins and add a spoonful of vegetable oil. Stir. The dough is ready.
STEP 7
Heat a pancake pan over medium heat, preferably one with a non-stick coating. Read about how to choose the ideal frying pan, as well as how to choose the right oil, in separate articles, links at the end of the recipe. Grease the pan with vegetable oil for frying. Spoon the dough into round pancakes.
STEP 8
Fry them on one side until golden brown, then turn them over to the other. Remove the finished pancakes to a plate. Before the next batch, you don’t have to grease the pan anymore - the oil in the dough will start working. Fry the pancakes from the entire dough in this way.
STEP 9
Serve the pancakes to the table. Bon appetit!
