Milk pancakes with apples, vanilla and raisins

STEP 1
Ingredients for pancakes. For a sweetener, take one that is not afraid of heat treatment. You can also take sugar (about 60 grams).
STEP 2
Beat the eggs with a whisk or mixer. Add salt and sweetener to taste.
STEP 3
Sift flour mixed with soda.
STEP 4
Pour warm milk and mix everything thoroughly.
STEP 5
Knead a homogeneous, lump-free dough.
STEP 6
Pour in boiling water and stir. You should get a liquid pancake batter. Adjust the amount of sweet and salty in the dough if necessary (taste the dough and report what is missing).
STEP 7
Add vegetable oil and mix. Let the pancake dough rest for 20-30 minutes.

In the meantime, you can start filling. Ingredients for filling.

Peel the apples from seeds and peel, cut into small cubes.
STEP 10
Melt butter in a frying pan, add sugar. Over medium heat, bring the mixture to a caramel color, stirring constantly. You can skip the sugar step at this stage, especially if you have sweet apples and raisins. You can add the same sweetener to the filling.
STEP 11
Add chopped apples, washed and steamed raisins and fry until the apples are soft and the moisture has evaporated.
STEP 12
At the end of cooking, add vanillin at the tip of a knife and mix. Fry for another 1-2 minutes. The apple filling is ready.
STEP 13
Bake the pancakes in a well-heated frying pan on both sides until golden brown.
STEP 14
Place the filling on the edge of the pancake.
STEP 15
Wrap the pancake in an envelope.
STEP 16
Fry the pancakes over medium heat until golden brown.
STEP 17
Serve with tea, coffee or milk. Bon appetit!
