I make this soup often, but recently I’ve made meatballs without adding eggs, and instead of soaked bread I add a little breadcrumbs. With this cooking method, the broth always remains clear.

Instead of bread, I add semolina. and the minced meat must be kneaded like dough before forming the meatballs. 10-15 minutes. then the meatballs will be juicy and airy.
