Soup with meatballs and canned beans

A simple, low-fat, but satisfying soup made from simple ingredients. I really love such simple soups without frying, vegetable oil and excess fat. Although, if desired, carrots can be fried in a frying pan. And if desired, you can add finely chopped onion. Any minced meat can be used for meatballs, but my favorite is lean beef. Due to this, the calorie content of the dish is greatly reduced.

    Prepare the ingredients. To prepare soup with meatballs and canned beans, we will need: water or ready-made broth (I used beef), canned beans in their own juice, potatoes, moruov, dill and bay leaf.

    Place the canned beans in a colander and allow the liquid to drain. You can rinse with water to remove any remaining sticky juice from the beans.

    Peel the potatoes and cut into medium cubes.

    Place potatoes, bay leaves in a saucepan, add water or broth. Place the pan on the fire and bring to a boil. Cook, stirring, for about 10 minutes.

    Meanwhile, peel the carrots and grate them on a coarse or medium grater.

    Wash the dill, dry and finely chop.

    Meatballs. To prepare meatballs we will need: ground beef (I used lean beef, but you can use mixed or chicken), ground black pepper and salt.

    Add salt and pepper to the minced meat and knead until smooth.

    Form the minced meat into small identical meatballs slightly smaller than a walnut.

    Add grated carrots and meatballs to the boiling broth. Stirring, cook the soup for about 10 minutes, periodically removing the foam.

    Add canned beans and dill to the soup. Bring to a boil again and cook for 1-2 minutes.

    Let the soup brew for 5 minutes and pour into bowls. Bon appetit!

Very good light soup! It's easy and quick to prepare. This is exactly what I needed. I made the meatballs from minced lean pork, boiled them first, and then added the potatoes. This is to remove the foam that the meat produces. The broth turned out light and transparent, very appetizing. All vegetables are added raw, this reduces the cooking time of the soup. I like canned beans better, they seem to have a milder taste) It was interesting to try the soup without onions at all, it’s unusual, but it’s not really needed) From the spices I added black pepper, vegetable seasoning and pieces of paprika. I didn’t add a bay leaf, especially since the soup was already very aromatic and tasty. I'm happy with the result. A hearty but light lunch, rich in protein and fiber. I make meatball soup, but I never thought of adding beans to it. Thanks for the idea. Next time I make this soup, I'll try adding this ingredient.
