Lentil and meatball soup

Incredibly tasty, satisfying, warming lunch for the whole family! Lentil and meatball soup is very easy to prepare. It turns out to be an incredibly rich, bright first course. You can serve it with sour cream or just like that, sprinkled with ground allspice. It’s convenient that the vegetables in the soup can be replaced and combined in different ways.

    STEP 1

How to cook soup with red lentils and meatballs? Prepare everything according to the list. What minced meat is best to use for making meatballs? Absolutely any minced meat is suitable: mixed meat, beef, pork, and poultry. I used ready-made store-bought minced pork.

  2. STEP 2

    STEP 2

Peel the potatoes, onions and carrots. Rinse all vegetables under running clean water. Peel the bell peppers and remove the core. Remove the skin from the tomato if necessary.

  3. STEP 3

    STEP 3

Finely chop one onion and add to the minced meat. Add salt to taste. Mix everything thoroughly. If desired, you can add your favorite spices and garlic powder to the minced meat.

  4. STEP 4

    STEP 4

Use a teaspoon to scoop out the minced meat and form a small ball. In this way, roll out small meatballs from all the meat.

  5. STEP 5

    STEP 5

Rinse the lentils several times until the water is clear. Cut the potatoes into small cubes or cubes.

  6. STEP 6

    STEP 6

Boil water or broth in a saucepan. Send the potatoes, meat balls and lentils to cook. After boiling, add salt to the broth to taste and reduce the heat on the stove to moderate. Boil the soup until the potatoes and meatballs are ready. You will need 15 to 25 minutes.

  7. STEP 7

    STEP 7

Meanwhile, prepare the frying. Grate the carrots on a coarse grater. Chop the second onion and bell pepper into small pieces.

  8. STEP 8

    STEP 8

Cut the tomatoes into medium-sized cubes and set aside; we will need them in step 10.

  9. STEP 9

    STEP 9

In a frying pan in vegetable oil, fry onions, carrots and peppers until all ingredients are soft. Don't forget to stir the chopped vegetables so that nothing burns.

  10. STEP 10

    STEP 10

When the potatoes are soft, add the roast, tomatoes and bay leaf to the pan. By the way, laurel can be excluded if desired. Wait until it boils, add finely chopped herbs and remove the pan from the heat.

  11. STEP 11

    STEP 11

Let the soup brew for 10-15 minutes and serve.

The recipe for soup with lentils and meatballs attracted me, first of all, because of the presence of meatballs. I really love soups with them since childhood. And lentils make a simple soup with meatballs unusual. The soup turned out tasty and satisfying. Lentils (I used green ones) add a very pleasant flavor, it’s barely perceptible, but still radically changes the taste of the soup. I made the meatballs from minced pork. I grated the tomato because my daughter doesn’t like tomato pieces in soups. This soup has a rich taste, the soup itself turned out to be quite thick (I cooked it in two liters of water). This lentil soup is perfect for a fall lunch. It turns out bright, so it pleases not only with its taste, but also with its appearance. Thank you very much for the recipe!

The recipe is great! Thanks to the author! I have made small changes to the dish: 1. green lentils (red in the recipe), 2. no tomatoes and peppers in the roast and 3. minced meat from two types of meat. More details about the nuances.1. Green lentils are cooked for 40 minutes, and the whole soup - 15-20. Therefore, I first boiled the lentils for 20 minutes in a 1:2 ratio in unsalted water. They didn't recommend adding salt; they said it would take longer to cook. I poured the half-cooked beans into the broth and continued according to the recipe.2. I didn’t put tomatoes and peppers on purpose. I just didn’t feel like it.3. Minced meat from two types of meat. I almost always buy pork and minced poultry - chicken or turkey. Of the two types of minced meat, I mix my “signature” one. The product always turns out delicious: cutlets, meatballs, filling for “whatever.” The soup was no exception: 200 grams of pork and 200 grams of minced turkey. From 400 grams we get 20 meatballs. The household is delighted! If anyone is interested in the lentils in the soup: they do not boil over and retain their shape, they taste like boiled peas, they are soft. Overall, a nice thing.
