Red Lentil Soup
Red food lentils have been known to mankind, perhaps, since the times of Ancient Egypt. At least, it was there that they especially liked to cook it in different ways, some of which, by the way, have been preserved to this day. There are many varieties of red lentil soup: regular, puree, cream, liquid, thick, with the addition of many additional products.
And since red lentils are quite low in calories and at the same time have a lot of useful substances such as magnesium, fiber, vitamin B9, and vegetable protein, adherents of a healthy diet and all kinds of diets like to include it in their diet. In addition, compared to the same peas, red lentils cook faster and are absorbed by the body just as well, if not better.
If your family has been cooking pea soup for a long time according to an old grandmother’s recipe, you can easily and simply replace the peas with lentils. Be it soup with smoked meats, with potatoes, with chicken, with tomatoes. By the way, red lentils are popular not only in Egypt, but throughout the Middle East and Arab countries. They readily cook soup with it in Turkey and treat tourists to it.
Puree soup with red lentils is very tasty. For this, boil it in water or meat broth along with vegetables (potatoes, carrots, onions, standard set). Then puree with a blender, adding boiling water if necessary. Salt and pepper to taste. When serving, sprinkle with chopped fresh herbs. For greater tenderness, you can add milk or cream, sour cream or mayonnaise to this soup.
A regular soup with these legumes can be made with any set of ingredients you have on hand, including frozen mixtures from the supermarket. To do this, you don’t even need to go looking for a recipe - just throw everything into the pan one by one, starting with the one that takes longer to cook. For example, when the lentils are almost ready, you can add the Mexican mixture to a pan of boiling water. And cook for ten minutes. But it’s better, of course, to play it safe and choose a suitable lentil soup recipe.
