Wash the lentils and soak overnight
STEP 3

Pour the lentils into a thick-walled cast-iron pan, add water and cook.
STEP 4

Onions, parsley and carrots, peel and cut.
STEP 5

Pour oil into a frying pan, heat it and add spices and chopped garlic into the hot oil. Heat the spices for no more than 3-5 minutes so that they release their aromas to the oil.

Add onion and lightly fry it.
STEP 7

Add carrots and parsley to the onions. Simmer until almost ready.
STEP 8

Meanwhile, peel the tomatoes and chop finely.
STEP 9

Add tomatoes. and simmer further
STEP 10

Remove the seeds from the pepper, you can chop it and add it to the stir-fry.
STEP 11

When the lentils are ready, I taste them and add frying. Cook for another 5 minutes.
STEP 12

Add cilantro to the finished soup. I had it fresh frozen. But if there is a fresh option, it will be better. Turn off the heat and let the dish sit for a while (it takes me 20-30 minutes).
STEP 13

Pour the finished soup into bowls.
