Sour cabbage soup with sauerkraut stew

Traditional cabbage soup in a modern version, but like from a Russian stove. Shchi is one of the favorite dishes of the Russian population, at least in our family; this soup is prepared very often and never gets boring. In my opinion, real cabbage soup can only be prepared from sauerkraut, having first washed it and stewed it separately, and in meat broth. Then you really get nourishing, aromatic and rich cabbage soup. Of course, the exception is summer cabbage soup made from sorrel and nettle. When you don’t have meat broth on hand, you can use stew (beef or pork). You can’t spoil cabbage soup with stew at all. It’s tasty, satisfying and cooks much faster than using a piece of meat.
