Sour cabbage soup with sauerkraut stew
Traditional cabbage soup in a modern version, but like from a Russian stove. Shchi is one of the favorite dishes of the Russian population, at least in our family; this soup is prepared very often and never gets boring.
In my opinion, real cabbage soup can only be prepared from sauerkraut, having first washed it and stewed it separately, and in meat broth. Then you really get nourishing, aromatic and rich cabbage soup. Of course, the exception is summer cabbage soup made from sorrel and nettle.
When you don’t have meat broth on hand, you can use stew (beef or pork). You can’t spoil cabbage soup with stew at all. It’s tasty, satisfying and cooks much faster than using a piece of meat.

Step-by-step preparation

Wash the cabbage and simmer in a separate, thick-walled container for 25-30 minutes.
STEP 3

Peel the onion, chop and fry in vegetable oil
STEP 4

Peel the carrots, grate them on a coarse grater and add them to the onion
STEP 5

Peel potatoes, cut into cubes
STEP 6

Mash the stew with a fork
STEP 7

Place chopped potatoes and stew into a saucepan of boiling water.
STEP 8

When the potatoes are almost ready, test for softness, add fried carrots and onions, salt, add peppercorns. Lastly, cabbage.
STEP 9

Cook for another 5 minutes, add the bay leaf to the boiling soup. Turn off and let the soup brew.
STEP 10

Our cabbage soup infuses for about an hour, and sometimes less. Then someone can’t stand it and pours himself a plate of fatty and aromatic cabbage soup. Be sure to sprinkle with fresh herbs
