STEP 1
How to make meat with mushrooms in sour cream sauce in a frying pan? Prepare your food. You can take any part of pork, I used tenderloin, loin or ham works well. Mushrooms are suitable both fresh and dry. Pre-soak dry ones in water. Sour cream must be fresh; sour cream may curdle.
STEP 2
Rinse the meat under cool water, then dry with a paper towel. Peel it from the veins, then cut it into small pieces. When cutting, make sure that the pieces are cut across the grain, then the meat will be softer.
STEP 3
Clean the mushrooms from dirt and cut them into large pieces - after frying they will greatly decrease in size. I don't cut off the legs.
STEP 4
Peel the onion and then cut into thin half rings.
STEP 5
Heat a frying pan over medium heat. Pour vegetable oil onto it. Place the meat. Fry the meat for a few minutes until a crust forms on it - this will seal the juices inside and the meat will remain juicy. As soon as the meat changes color, remove it from the pan.
STEP 6
Place the onion in the pan. Fry it for several minutes over low heat. The onion should become transparent.
STEP 7
Add champignons to the onions. Cook the onions and mushrooms for 5-7 minutes, stirring them gently.
STEP 8
Then add flour to the mushrooms and stir quickly.
STEP 9
And immediately pour a glass of boiling water into the pan. Stir quickly, the sauce will immediately thicken with flour.
STEP 10
Place the meat, add salt and pepper. Stir.
STEP 11
Pour in sour cream, stir again.
STEP 12
Cover with a lid and reduce heat. Cook the meat in the sauce for 25 minutes. Be sure to stir it occasionally - the sauce is quite thick and may start to burn. Adjust the thickness of the sauce to taste - if you like it thinner, add more hot water.
STEP 13
After the specified time, the meat is ready. Serve it sprinkled with herbs.
