    How to make mackerel with vegetables for the winter? Prepare all the necessary products. Frozen or fresh fish is suitable for the salad. When choosing mackerel, make sure that the carcasses are an even silver color without yellow spots or visible damage. If you have frozen fish, place it in advance on the bottom shelf of the refrigerator. Do not defrost completely, this will make it easier to process.

    Gut the mackerel and wash thoroughly. Be sure to remove the black film in the belly, otherwise the fish will taste bitter. Cut off the heads, fins, tails and fillet the carcasses. The weight of my cleaned fish was 1.2 kg.

    Wash and dry the tomatoes. Grate the tomatoes on a coarse grater or grind through a meat grinder. I used a grater and discarded the skins. The yield of tomato juice was about 1.6 liters. Place the tomatoes in a suitable pan.

    Peel the onions and carrots and rinse. Cut the onion into thin half rings or quarter rings. Grate the carrots using a coarse grater or a vegetable slicer for Korean salads. Add the chopped vegetables to the tomatoes.

    Add salt, sugar and refined vegetable oil to the pan. Mix everything well.

    Place the pan on the stove. Bring to a boil over high heat, then reduce the flame to low and simmer the vegetable mixture under the lid for about one hour. Add bay leaf and peppercorns.

    Cut the mackerel into medium-sized portions. Place the fish in the pan.

    Mix the salad very carefully so as not to damage the pieces. Leave on the stove for another 20-30 minutes (until the mackerel is ready). Pour in the vinegar, stir again and taste. Add salt, sugar or vinegar if necessary. Keep on the stove for another 5-10 minutes.

    Sterilize jars and lids in any way convenient for you. This can be done in the oven, microwave or in a water bath. Pour boiling water over the lids and leave for 5-10 minutes. Place the boiling fish salad into jars and close with a special key.

    Turn the container with the salad upside down and wrap it in a warm blanket. Leave until completely cool, and then put in the cellar or pantry for storage.
