Machanka (mochanka) in Belarusian with thin pancakes

An amazingly tasty hearty and colorful dish originally from Belarus! Mochanka or machanka (from the word machat, i.e. dunk) is a thick meat gravy with different types of pork meat products: ribs, homemade sausage, lard and smoked meats; brisket is best. You can dip whatever you want into it, but most often it’s pancakes, and these can be either thick yeast or kefir pancakes or thin ones made with milk. This dish can be found in an ordinary Belarusian village, and today I also wanted to cook it!

    Coarsely chop homemade sausage (unfortunately I didn’t have pork sausage and I took chicken sausage)

    Fry the smoked brisket in the resulting fat for 1-2 minutes so that it releases its aroma

    Then put the onion in the pan and fry for 3-4 minutes until soft

    Now place the pork ribs in the pan.

    Fry covered for 20 minutes over medium heat, stirring

    While the mochanka is stewing, let's prepare pancakes according to your favorite recipe, I love thin pancakes, for which you will need the ingredients as in the photo

    Now pour in the milk in portions, bringing the dough to the desired consistency. I love thin, tender pancakes, so I make the dough quite liquid

    Let's return to our mochanka - table 2. l. dilute flour with 100 ml of water, mix so that there are no lumps and pour into the pan

    Add about 200 ml of water or broth and simmer for another 10 minutes

    Now we transfer the sponge into pots

    We put 1 table in each pot. l. sour cream and add water so that it reaches 2/3 of the height of the pot

    While the pots are in the oven, bake the pancakes - grease the frying pan with a piece of lard, this is the best way to prevent the pancakes from sticking

    Pour 2/3 of a ladle of pancake batter into a heated frying pan and distribute evenly over the frying pan.

    Wait 2-3 minutes and turn it over

    Fry the pancake on the second side for 1-2 minutes

    While we were baking the pancakes, the mochanka was ready! You can serve each one a pot in portions, but in my opinion this is very, very much, the four of us ate our fill of one small pot)
