Liver pies in the oven

Ruddy, delicious, hearty pies will fill your home with a delightful aroma! Liver pies are a very popular dish in my family. I use different livers for pies: beef, chicken and even pork, I add potatoes to the filling or not! I also cook them both in a frying pan and in the oven... By the way, this version of pies is universal - they can be both fried and baked. Today I am sharing with you the option that my family loved the most!

  1. STEP 1

    STEP 1

    Required ingredients for the dough

  2. STEP 2

    STEP 2

Break the egg into a separate bowl and add salt.

  3. STEP 3

    STEP 3

    Then sugar

  4. STEP 4

    STEP 4

    Beat a little

  5. STEP 5

    STEP 5

Add vegetable oil here and mix

  6. STEP 6

    STEP 6

Sift the flour into a separate bowl, add dry yeast and mix

  7. STEP 7

    STEP 7

    Add the prepared egg mixture

  8. STEP 8

    STEP 8

Pour in warm milk, ideally 35-40 degrees for the yeast to start working

  9. STEP 9

    STEP 9

Using a spoon and then with your hands, mix the dough, knead well for 10-15 minutes until it stops sticking to your hands. The dough is smooth, even, soft and elastic

  10. STEP 10

    STEP 10

Cover the finished dough with a towel and leave in a warm place for 1 hour.

  11. STEP 11

    STEP 11

During this time we will prepare the filling

  12. STEP 12

    STEP 12

We clean the liver from films and veins, if necessary, and cut into arbitrary pieces

  13. STEP 13

    STEP 13

Heat vegetable oil in a frying pan

  14. STEP 14

    STEP 14

Place the liver in a heated frying pan and fry until tender, at the end add salt and pepper to taste

  15. STEP 15

    STEP 15

Chop the onion as desired, you can coarsely

  16. STEP 16

    STEP 16

Three carrots on a coarse grater

  17. STEP 17

    STEP 17

Remove the fried liver from the pan, leaving the oil in the pan

  18. STEP 18

    STEP 18

And add onions and carrots to the remaining vegetable oil.

  19. STEP 19

    STEP 19

    Fry until done

  20. STEP 20

    STEP 20

Place the fried liver and vegetables in a blender bowl.

  21. STEP 21

    STEP 21

    Puree until pureed

  22. STEP 22

    STEP 22

Our filling is ready! If you don’t have much liver, add mashed potatoes - you’ll get equally tasty pies, but more budget-friendly

  23. STEP 23

    STEP 23

In an hour, our dough has risen well, knead it and knead it a little again so that all the air bubbles come out

  24. STEP 24

    STEP 24

Divide the dough into small balls, I got 20 pieces.

  25. STEP 25

    STEP 25

Knead with your hands or roll out into a flat cake with a rolling pin

  26. STEP 26

    STEP 26

Place the filling on each piece and seal the edges to form a pie.

  27. STEP 27

    STEP 27

These pies can be either fried in a frying pan or baked in the oven - in both cases they are very tasty! Today I chose the second option for myself! Place the pies on a baking sheet, seam side down.

  28. STEP 28

    STEP 28

Brush the pies with egg and let them rise in a warm place for 15-20 minutes.

  29. STEP 29

    STEP 29

Then place the pies in an oven preheated to 180 degrees for about 30 minutes and bake until golden brown. Cover the finished pies with a towel and let cool

  30. STEP 30

    STEP 30

    Bon appetit!

nasstin, oh, what delicious liver pies! I like these two fillings for pies most of all - potato and liver, but combining them into one is a real sensation! Thank you very much for the recipe and the two-in-one filling idea!

Ira, thanks for the advice, I baked it! The result was delicious pies; the rice added airiness and tenderness to the liver filling. The taste was reminiscent of the pies from childhood, with liverwurst. Nostalgia... nasstin, THANK YOU FOR THE RECIPE, very tasty!

Without yeast dough on low-fat sour cream (kefir). I cooked the beef liver in half, carrots too, but it’s better to grate the raw ones on a medium grater! The liver and carrots are simply chopped on a chopper or a chopper, they call it, you can finely chop it by hand. The liver will finish in the oven and the carrots will be baked. I fried the onion, you don’t have to fry it, finely chop it or replace it with green (scald the onion first). All this is to reduce calories. I still want to bake (I modified the original recipe to see the calorie content. And there is no such option here)) It turned out to be about 181 kcal is good. Grease a baking sheet with vegetable oil, place the pies, bake for about 200 g for 20-25 minutes. I didn’t grease anything. For a beautiful color at the end I just sprinkled it with water)

I baked these pies over the weekend, just boiled the liver, just as per the recipe. I didn’t have time to get it, everyone was in the kitchen at the table, including the cat, with hungry eyes. They devoured it by both cheeks. TASTY!

I liked the recipe, thank you! but there is a BUT, girls, do not fry in oil after the liver, wash the pan and pour a new portion of oil and fry the onions and carrots, or as Izhik did, boil the liver
