    Wash the chicken liver, thoroughly clean it of films and remnants of the gallbladder (green). Usually the liver is sold of good quality and does not require grueling preparation, but it is worth reconsidering, because If you accidentally get hold of a remnant of the gallbladder, the bile can spoil the entire dish with its bitterness.

    Combine liver and raw eggs in a large bowl.

    Add 3 tbsp. fat sour cream.

    Add 3 tbsp. flour.

    Beat everything with a blender. Add 1/2 tsp. salt. Mix.

    Heat a frying pan with 1 tbsp. l. oil. Just before frying the first pancake, you should grease it with oil. In the ladle you need to take a volume of liver dough sufficient for a thin pancake (3 mm) and completely cover the entire surface of the frying pan. For my 20cm frying pan, I take 1/2 of the ladle and distribute the dough in a circular motion on the surface. How to choose a frying pan and oil, read the separate articles at the end of the recipe.

    You need to fry the pancakes over medium heat, as soon as the pancake “sets” and begins to move away from the edges of the walls (after 1-2 minutes) and almost ceases to be pink, carefully pass the spatula under the pancake and make sure that it does not stick anywhere, turn it over onto a raw side. Turn over in one confident motion. Even if the pancake is torn, don’t worry, finish frying it and place it among the layers in the cake - it will “camouflage” perfectly.

    Fry for about 1 minute more, turning over, or until browned.

    Chop the onion.

    Grate the carrots.

    In a frying pan, fry a mixture of onions and carrots over medium heat for 7-10 minutes. Salt (1/2 tsp salt), pepper (1/5 tsp)

    Cool and divide by the amount required for each layer so that the frying is evenly distributed in the cake. There is no need to put the carrot-onion mixture on the last pancake, so if you have 10 pancakes, you need to divide the mixture into 9 servings.

    Place the pancake on a plate. Coat with 1 tbsp. mayonnaise with garlic.

    Distribute the carrot and onion frying. Cover with the next pancake.

    To decorate as in the title photo, you will need 3 boiled eggs. Separate the whites of the eggs from the yolks and grate them individually on a fine grater.

I was interested in the recipe for liver cake with carrots and onions from the liver. I used chicken liver. I had a package weighing 490 grams. I did not adjust the amount of other ingredients. The eggs were taken in category C1. Instead of sour cream and mayonnaise with garlic, I added garlic sauce. I made the minced meat for the liver pancakes in a food processor. I fried pancakes in a cast iron frying pan. The diameter of the frying pan is quite large (26 cm), so I simply spread the dough over the frying pan with the rounded side of the ladle, trying to make pancakes with a diameter of about 20 cm. My first pancake did not come out; it tore when turning it over. I added a little more flour to the dough, after which the pancakes no longer tore. In total, I made 7 pancakes (including the failed one). This is my first snack cake, and I was very pleased with the result, like everyone else in my household. The liver cake turned out very tender, juicy and amazingly appetizing. All ingredients go well together. Very tasty! Elvira, thank you very much for the wonderful recipe!

Awesome cake! Very tasty. I made it before and the pancakes didn’t work out. So the recipe worked! We ate it faster than I could take a photo. Thanks for the carrot and onion liver cake recipe!
