    Wash the zucchini, dry it, cut off the ends. Peel off the skin. It is not necessary to cut off very thin skin. If using more mature squash, trim off the rough skin and scoop out the seeded center. Grate the zucchini on a coarse grater. Squeeze the resulting mass with your hands and drain the juice. I got dry fruits, there was practically no juice.

    Beat the eggs into the zucchini. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Add salt and pepper. Stir until smooth.

    Begin adding flour in portions, stirring after each. Be prepared for the fact that you may need more or less flour than stated in the recipe; this will depend on the juiciness of the zucchini, the size of the eggs and the properties of the flour itself. Focus on the consistency of the dough.

    It should become quite thick, like regular pancakes. It took me a glass of flour with a volume of 200 ml.

    Heat a frying pan over medium heat, I use a pancake pan with a non-stick coating, 20 cm in diameter. Drop a little vegetable oil on it and spread it. Spoon the dough, spreading it over the bottom in a thin layer, forming a pancake.

    Fry the pancake over medium heat until browned on one side, then turn over to the other and fry until cooked. Remove the finished pancake and grease the pan again. Place the next portion of dough. Fry pancakes using all the dough in this way. I got exactly 5 pieces. Cool them completely.     Peel and chop the garlic - on a grater, through a press or just with a knife. Add it to mayonnaise and mix.

I've been wanting to make zucchini cake for a long time. I decided to make this beauty for the guests for the holiday. Looks great on the table! True, I couldn’t make a rose from tomatoes, no matter how hard I tried) All the guests really liked it, even those who don’t like zucchini. The cake is delicious, fresh tomatoes perfectly set off and complement the zucchini cakes. Garlic envelops it with a distinct aroma) I didn’t replace the mayonnaise with sour cream, as I usually do. I didn’t want the cake to drip from the released whey, and mayonnaise tastes much better with these vegetables. I made five pancakes from this quantity of ingredients; I fried them in a large non-stick frying pan. Thanks to the author for the recipe, very beautiful and tasty!

Good recipe. When cooking, I also added onions and carrots, lightly fried in vegetable oil, and hard cheese, grated on a coarse grater, between the zucchini cakes.
