Lenten pies with potatoes and mushrooms

Step-by-step preparation
STEP 1
Prepare all ingredients. In the recipe I used fresh frozen mushrooms, you can also use fresh mushrooms. Let's start preparing the pies by preparing the dough.
STEP 2
Place yeast and sugar in a deep bowl, add warm boiled water and leave for 15 minutes. During this time, the yeast will begin to act and a fluffy yeast cap will appear on the surface.
STEP 3
Stir the mixture and add salt, vegetable oil and gradually begin to sift the flour. Depending on the quality of flour, you may need more or less amount than stated in the recipe. Mix first with a spoon, then with your hands, knead the dough for 7 - 10 minutes until it becomes homogeneous and does not stick to your hands. Cover the bowl with the dough with a clean napkin and place in a warm place for 40 - 60 minutes, until it has doubled in size.
STEP 4
While the dough is rising, let's prepare the filling. Peel the potatoes and boil until tender in salted water. Fry the mushrooms in vegetable oil, at the end add seasoning for potatoes and vegetables, add a little salt and pepper if necessary. Pound the finished potatoes, adding potato broth to it. Add mushrooms to the mashed potatoes and mix - the filling is ready.
STEP 5
Knead the risen dough again, place it on the work surface, roll it out and form a sausage. We will cut small pieces from the sausage.
STEP 6
Roll out each piece, put the filling, pinch and form into pies. Fry the pies in vegetable oil on both sides until golden brown and serve hot. Lenten pies with potatoes and mushrooms on airy yeast dough are ready!
