In the summer, when it’s hot, you don’t really want to cook hot soups. So I started looking for a cold soup recipe. I decided to stick with this beetroot soup recipe. I boiled the beets in advance. I really liked that the main preparation took very little time. For satiety, I added a little more cottage cheese to the beetroot soup. Moreover, for this it is better to use cottage cheese in grains so that they feel good in the dish. Rubbed through a sieve will not work here at all.
