STEP 1
How to make khachapuri with milk and cheese in a frying pan? First, start preparing the dough. Measure out the necessary ingredients for this. Take the milk out in advance so that it is not cold.

Sift the flour into a suitable sized bowl. Add salt and baking powder to the flour, mix.
STEP 3
Lightly beat the egg with a fork until smooth.
STEP 4
Add beaten egg and vegetable oil to dry ingredients.

Then pour the milk into the bowl.

Stir the resulting mass first with a spoon.

Then knead with your hands into a soft, homogeneous dough. Wrap the dough in cling film and leave on the counter for 30 minutes. During this time, the gluten in the flour will disperse, and the dough will become more tender and pliable.

Prepare the filling. You can use any greens you like. This can be one type of greens or assorted. In addition to parsley and dill, cilantro and green onions are suitable. Choose any hard cheese you wish. The main thing is that it is tasty, of high quality, without milk fat substitutes.

Wash the greens and dry well. If necessary, remove large branches. Finely chop the greens.

Grate the hard cheese on a coarse grater. Mash the cheese.

Add chopped herbs and a raw egg to the filling.

Mix everything well.

The dough has “rested” and become more elastic. It's easy and convenient to work with. Divide the dough into equal parts (about 6-7 parts).

Roll out each piece of dough into a thin round cake.

Visually divide the filling into as many parts as there are dough pieces. Place the filling in the middle of the flatbread.

Raise the edges of the flatbread above the filling, as if forming a bag. Pinch well.

Turn the dough over with the filling, seam side down, and roll it out carefully without pressing too hard to prevent the dough from tearing.

Heat the frying pan. Khachapuri will be baked in a dry frying pan. Place the flatbread in a frying pan and fry over moderately high heat until golden brown on one side first.
STEP 19
Then turn the khachapuri over to the other side and fry until golden brown on the other side. In this case, the cake will swell a little, but then settle. While one khachapuri is fried, form the next one. This way the cooking process will be continuous, faster and, importantly, with even heating of the pan.
STEP 20
Immediately brush the top of the finished khachapuri with butter. I got 6 khachapuri with a diameter of approximately 9-10 cm.
