Khachapuri with cottage cheese in the oven

Insanely tasty and simple, for breakfast for the whole family! It is better to prepare khachapuri with cottage cheese in advance, so that you can quickly serve it by heating it in the oven, in a frying pan or in the microwave. They taste better when they are hot! But even when cooled, they are good to take on the road for a snack.

Step-by-step preparation

Cooking timeCooking time: 2 hr 30 mins
  1. STEP 1

    STEP 1

How to make khachapuri with cottage cheese? Prepare the required products according to the list. Take the highest grade, white wheat flour.

  2. STEP 2

    STEP 2

In a separate bowl, combine the yeast with sugar, add lukewarm water, and stir. Leave for 15 minutes until a foamy yeast “cap” appears.

  3. STEP 3

    STEP 3

Melt the butter over low heat, let it cool slightly. You can also melt it in the microwave.

  4. STEP 4

    STEP 4

Combine separately vegetable oil and warm butter, activated yeast, salt, mix.

  5. STEP 5

    STEP 5

Pour most of the sifted flour into the liquid butter mixture and stir. Then add flour little by little, mixing the dough with your hands. You may need less flour, so you shouldn’t pour out all the flour at once to prevent the dough from being too dense. Focus on the consistency of the dough.

  6. STEP 6

    STEP 6

The dough should be soft, pliable, slightly sticking to your hands. Cover the dough with a towel and leave it warm to rise.

  7. STEP 7

    STEP 7

Start preparing the filling. Prepare your food.

  8. STEP 8

    STEP 8

Wash the fresh greens, dry them, and chop them finely.

  9. STEP 9

    STEP 9

Combine cottage cheese with a raw egg, chopped dill, salt and mix well.

  10. STEP 10

    STEP 10

My dough rose well in 1 hour and 10 minutes. If your dough does not rise for a long time, replace the yeast - this means that it may be of poor quality.

  11. STEP 11

    STEP 11

Punch down the dough, place it on a floured table, and divide into 5 parts.

  12. STEP 12

    STEP 12

Roll each part into a round cake 0.5 cm thick.

  13. STEP 13

    STEP 13

Place a fifth of the filling in the middle of the flatbread.

  14. STEP 14

    STEP 14

Lift the edges of the cake, collect it in a bag, and pinch it well.

  15. STEP 15

    STEP 15

Carefully roll out the cake so that the dough does not tear.

  16. STEP 16

    STEP 16

Combine the yolk with water and vegetable oil and mix.

  17. STEP 17

    STEP 17

Place the formed khachapuri on a baking sheet greased with vegetable oil, coat the top with the resulting yolk mixture. I baked on two baking sheets at once.

  18. STEP 18

    STEP 18

Bake khachapuri in an oven preheated to 180 degrees for about 25 minutes until golden brown. Focus on the features of your oven. Let them cool a little and serve. Bon appetit!

I'll save the recipe, I think it will be delicious. Instead of cottage cheese, you can take Adyghe cheese and suluguni.

I really love khachapuri and different flatbreads in general. Overcooking them in a frying pan can be really long and tedious. It turns out faster and less labor in the oven) I divided the dough into 4 parts so that they fit on one baking sheet. The dough is pliable, pleasant, and does not tear when rolled out. There was quite a lot of filling in terms of quantity and that makes me happy. The flatbreads came out rosy, appetizing and very tasty. We took them with us on the road. Thanks for such a wonderful recipe!

It turned out very tasty. The dough is weightless, airy, thin, but at the same time fluffy; the cottage cheese did not make it wet. Everything is harmonious. In moderation of salt. Everyone in the family liked it. My mother also made this recipe and said that it is now one of her favorite dishes. By the way, I made it with minced meat, it was also very tasty. The dough is suitable for any filling. Thanks for the recipe

Wonderful recipe, I saved it and will make it again. The filling turned out to be a bit runny, so after pinching it I didn’t dare roll it out thinly, I just kneaded it slightly with my hands. Because of this, it turned out to be such buns, but it did not affect the taste in any way. Super! Thanks for the recipe!

These flatbreads can even replace bread. Or serve as an independent dish for tea or coffee, or maybe even compote. Yes, the filling for such flatbreads can be not only cheese and cottage cheese, but also, for example, like I made crushed potatoes with the same cheese or coarsely grated sausage. For the dough, I prefer to use fermented baked milk rather than kefir; it seems to me that the taste of the dough becomes more delicate. Try different options and choose the one that suits you best.
