STEP 1

How to make khachapuri with cottage cheese? Prepare the required products according to the list. Take the highest grade, white wheat flour.

In a separate bowl, combine the yeast with sugar, add lukewarm water, and stir. Leave for 15 minutes until a foamy yeast “cap” appears.

Melt the butter over low heat, let it cool slightly. You can also melt it in the microwave.
STEP 4

Combine separately vegetable oil and warm butter, activated yeast, salt, mix.
STEP 5

Pour most of the sifted flour into the liquid butter mixture and stir. Then add flour little by little, mixing the dough with your hands. You may need less flour, so you shouldn’t pour out all the flour at once to prevent the dough from being too dense. Focus on the consistency of the dough.
STEP 6

The dough should be soft, pliable, slightly sticking to your hands. Cover the dough with a towel and leave it warm to rise.
STEP 7

Start preparing the filling. Prepare your food.
STEP 8

Wash the fresh greens, dry them, and chop them finely.
STEP 9

Combine cottage cheese with a raw egg, chopped dill, salt and mix well.
STEP 10

My dough rose well in 1 hour and 10 minutes. If your dough does not rise for a long time, replace the yeast - this means that it may be of poor quality.

Punch down the dough, place it on a floured table, and divide into 5 parts.
STEP 12

Roll each part into a round cake 0.5 cm thick.
STEP 13

Place a fifth of the filling in the middle of the flatbread.
STEP 14

Lift the edges of the cake, collect it in a bag, and pinch it well.
STEP 15

Carefully roll out the cake so that the dough does not tear.
STEP 16

Combine the yolk with water and vegetable oil and mix.
STEP 17

Place the formed khachapuri on a baking sheet greased with vegetable oil, coat the top with the resulting yolk mixture. I baked on two baking sheets at once.
STEP 18

Bake khachapuri in an oven preheated to 180 degrees for about 25 minutes until golden brown. Focus on the features of your oven. Let them cool a little and serve. Bon appetit!
