STEP 1
How to make homemade khachapuri from ready-made puff pastry with egg? Very simple! To begin, prepare the necessary ingredients according to the list. You can replace Suluguni with any other cheese: unbrined mozzarella for pizza, regular Russian, etc. The main thing is that the cheese is tasty and melts well. The butter should be at room temperature, so remove it from the refrigerator in advance.
STEP 2
Grate the cheese on a coarse grater.
STEP 3
In a bowl, combine grated cheese, egg, sour cream and soft butter. Mix everything thoroughly. If you wish, you can add chopped herbs to the filling. You can also replace or add greens to your liking. Cilantro, parsley, dill, green onions, etc. will do.
STEP 4
Now start preparing the dough. I have frozen puff pastry without yeast in square plates. You can use yeast or non-yeast dough, according to your taste. The dough must be defrosted on the bottom shelf of the refrigerator. Melt the butter first. If you wish, you can cook from puff pastry.
STEP 5
Beat the egg with a fork until smooth.
STEP 6
Roll out the dough on a floured table. Depending on what size you want to make khachapuri, it depends on how to roll out the dough. If in the form of small puffs, then roll each plate into a thinner square and cut it into 4 parts. Two plates will make 8 small-sized products. I was making large khachapuri, so I rolled the plate into a rectangle and divided it in half. In total I got 4 large size items.
STEP 7
Place cheese filling in the center of each square.
STEP 8
Now form the envelopes. Bring the edges of the dough towards the center and pinch well.
STEP 9
Transfer the pieces to a parchment-lined baking sheet. Brush them with beaten egg. If desired, you can sprinkle the khachapuri with sesame seeds. Bake in an oven preheated to 200°C for 20-30 minutes until golden brown.
STEP 10
Pour melted butter over the finished khachapuri. Serve the baked goods immediately while the cheese is hot and stretchy. Bon appetit!
