    Pour kefir and vegetable oil into a saucepan. Stir. Place the saucepan over low heat and heat the mixture to 37-39°C, stirring constantly. Then remove the saucepan from the heat.

    Pour sugar and salt into warm kefir and stir until completely dissolved.

    Sift the wheat flour into a deep bowl.

    Place the dough in a bowl, cover with a towel and leave warm for 30-40 minutes. We want it to rise a little bit.

    Proceed with the filling. You can use any one. I have this boiled rice with egg. First boil the rice in plenty of salted water until half cooked. Place the rice in a colander and let the water drain. Refrigerate. Hard-boil the eggs, cool, peel and cut into small cubes. Wash the cilantro and dill and dry. Finely chop the greens. In a bowl, combine fluffy rice, eggs, herbs, salt and pepper.

    Divide the risen dough into 12-14 identical pieces (I got 14 pieces of 60 g each) and roll them into balls.

I really liked the recipe for kefir pies in the oven! The dough turned out to be very easy to work with, despite the fact that I kneaded it by hand. Dry yeast was replaced with fresh pressed yeast. And since they need to be put into operation differently than dry ones, I decided to activate them in heated kefir. Its temperature was suitable for this. And I think I was not mistaken, because the yeast did not die and began to act, and the dough ended up turning out just right))) It was a pleasure to work with the dough, very good! The flatbreads are easy to make and fit well with the filling inside. The result was a lot of beautiful, delicious pies, just what we needed! Thanks for the recipe
