STEP 1
How to make hake fish cutlets juicy? Prepare your food. Take chilled fish - it contains much more useful substances. If you only have frozen hake, then you need to defrost it properly. After freezing, place the fish in the refrigerator for 4-6 hours and only then completely defrost at room conditions.
STEP 2
Wash the fish and dry it well. Now the hake needs to be chopped. I put it through a meat grinder, but you can grind the fish using a blender. As a last resort, you can chop it finely with a knife.
STEP 3
Peel the onion and also chop it. I also put it through a meat grinder.
STEP 4
Beat the egg into the minced meat. Take a larger egg, preferably homemade.
STEP 5
Salt the minced meat. I use regular sea salt, but you can add some kind of aromatic salt, such as Adyghe salt, to the dish. At this stage, you can add your favorite herbs and seasonings to the minced meat. What can go with minced fish? Lemon pepper, thyme, herbes de Provence - take it to your taste!
STEP 6
Add 3 tbsp to the dough. breadcrumbs. They will help absorb excess and also act as a “gluing” material. Also, bread crumbs can be replaced with semolina, flour in the same proportions, or even starch - the proportions are 2 times smaller. Knead the minced meat well.
STEP 7
Take some minced meat, make a flat cake, put a small piece of butter in the center for juiciness.
STEP 8
Form into a patty and roll in the remaining breadcrumbs.
STEP 9
Do the same with all the minced meat - make cutlets.
STEP 10
Heat vegetable oil in a frying pan. Place the cutlets and fry over low heat from the beginning on one side for about 7-10 minutes. Then carefully turn the cutlets over and cook until done, covering the pan with a lid.
STEP 11
