STEP 1

How to make chicken cutlets with gravy in the oven? Start by preparing the ingredients according to the list. You can make minced meat for cutlets from any meat and its combinations. I made my own minced meat from chicken fillet. You can also use ready-made store-bought minced meat.
STEP 2

Cut the cheese into medium cubes at the rate of 1 piece of cheese for one cutlet. Any cheese is suitable for this dish - hard, semi-hard. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well. I have Gouda cheese. STEP 3

Cut the chicken fillet or other parts of the chicken into pieces and grind in a blender or pass through a meat grinder. If you make minced meat using a meat grinder, then you can chop the onion and soaked bread with it. I ground the minced meat in a blender, so I grated the onion.
STEP 4

Pour cream or milk over white bread and leave for 10 minutes. It is not necessary to cut off the crusts of the bread.
STEP 5

Peel the onion, grate it on a fine grater or pass it through a meat grinder along with the minced meat.
STEP 6

In a bowl, combine minced meat, onion, bread soaked in cream, garlic cloves passed through a press and spices.
STEP 7

Knead the minced meat thoroughly until smooth, and then beat it, throwing it into a bowl. This is necessary for the minced meat to compact. Let the minced meat sit for 10 minutes.
STEP 8

Divide the minced meat into 6-8 equal parts and form even round cutlets, adding a cube of cheese inside each.
STEP 9

Place the cutlets in a baking dish greased with vegetable oil and place in an oven preheated to 180℃ for 20 minutes.
STEP 10

While the cutlets are baking, make the gravy. You can replace tomato paste with tomato sauce, ketchup or fresh crushed tomatoes. You can replace the broth with water. You can use any spices to suit your taste.
STEP 11

In a dry frying pan over low heat, stirring occasionally, fry the flour until a bright nutty aroma appears. Read how to choose a frying pan in a separate article.

Add sour cream and tomato paste and stir.
STEP 13

Continuing to stir, pour in hot broth or water, add sugar, salt and ground pepper. Bring the gravy to a boil and remove from heat. If you are unable to get rid of lumps, you can rub the gravy through a sieve.
STEP 14
