Homemade Krasnodar sauce

Rinse the tomatoes under water, cut them in half, remove the stem and cut the halves in half again. Place the chopped tomatoes in a saucepan, add 2 tablespoons of water, cover with a lid and place the saucepan over low heat. Simmer the tomatoes for about 20 minutes; the tomatoes should become soft.
STEP 3
While the tomatoes are cooking, rinse the apples under water, peel them, cut them in half, remove the stem and seeds and cut the halves in half again. Place the chopped apple slices into a clean saucepan, add 2 tablespoons of water, cover with a lid and place the saucepan over low heat. Simmer the apples with the lid closed for 15 minutes. Then drain the apples in a colander to remove excess liquid.
STEP 4
Peel the boiled tomatoes, place them in a blender bowl and grind until pureed. You can also use an immersion blender or a meat grinder for grinding. As a last resort, you can use a masher, but this grinding process will require much more time and effort.
STEP 5
Also chop the boiled apples in a blender bowl. You should get apple pulp.
STEP 6
Place a sieve over the pan in which the Krasnodar sauce will be prepared. Place tomato and apple puree in a sieve in portions and grind thoroughly. This procedure, grinding in a blender bowl and then grinding through a sieve, will allow you to achieve uniformity and better consistency of the sauce.
STEP 7
Place the saucepan with tomato-apple puree over medium heat and bring to a boil. You cannot cook the sauce over high heat, as it will gurgle a lot, so the hot sauce may get on you, which will lead to a burn. When cooking, foam will form on the surface of the puree. There is no need to remove it; the foam will gradually fall off on its own. Simmer the sauce over low heat with the lid closed for 20-25 minutes, stirring occasionally to prevent it from burning.
STEP 8
Add sugar and salt to the sauce and stir. Place all the spices (ground black pepper, cloves, allspice, ground cinnamon, nutmeg) in cheesecloth and make a bag. Dip this bag of spices into the sauce. Simmer the sauce with spices for another 10 minutes.
STEP 9
After the specified time, add the garlic passed through a press into the pan and pour in the vinegar. Simmer the sauce for another 5 minutes. Taste the sauce and add salt or sweeten it if necessary.
STEP 10
Prepare glass containers in which the “Krasnodar” sauce will be stored. Sterilize jars and lids in advance in any convenient way: in the oven, steamed, in water or even in the microwave.
STEP 11
Remove the bag of spices from the pan and rub the sauce through a sieve again. Boil the pureed sauce again and pour into sterilized jars, roll up or close with sterile lids. Turn the jars of sauce over and cover them with a blanket or blanket and let the sauce cool completely. The next day, store the “Krasnodar” sauce. It is best to store the cooked product in a cellar or basement, where it is always cool and dark.
