Remove it from the refrigerator in advance to soften it. You can adjust the amount of sugar to your taste. You don’t have to use nuts, or you can chop them and put them in the dough. Cookies with raisins will also be delicious.

    Wash the carrots well, dry and peel. Grate it on a fine grater. The finer the carrots are grated, the yellower the cookies will be.

    Take a large bowl and place soft butter in it. Add sugar. Mix the butter and sugar with a spatula. The purpose of the process is not to beat, but simply to combine the products, so there is no need to use a mixer.

    Add grated carrots to the oil mixture. Stir until the ingredients are completely combined - the mass should turn orange.

    Sift flour into a bowl. Just not all at once, but about 2/3 of the total. How much flour to add will depend on the juiciness of the carrots. Not all the flour was gone, but maybe vice versa, I’ll have to add it. Add baking powder.

    Knead the dough, first with a spoon, then with your hands. Decide as you go whether to add more flour or not.

    The dough should become thick, but remain soft. It will be sticky, don't let that scare you. Collect it into a ball.

    Take a baking sheet and line it with baking parchment. Wet your hands with cold water and roll into balls the size of large walnuts. Place them at a distance from each other, as the cookies will increase in size during baking.

I love and often make carrot cake with sour cream, so when I saw this recipe, I had no doubt it would be delicious! And I was not mistaken) The recipe is very simple and affordable. The only difficulty is grating the carrots on a fine grater. But for the sake of color, you can try. It took me about 10 minutes to knead the dough. It took less flour, about 200-250 grams. I added lemon zest for flavor. The cookies were baked in my oven for 25 minutes. These are the cute sunny treats I got! I would like to sincerely thank the author. Carrot baked goods are always bright and unusual in appearance. I baked cookies according to different recipes, this version is also very good. Two large carrots were just pulled out to 250g. I had frozen butter and didn’t want to wait for it to thaw, so I cut it into pieces and put it in the microwave to defrost. Quite quickly the oil softened, but did not flow. It combined well with the sugar. I used the flour according to the recipe, no more and no less) I kneaded the dough on the table, it’s more convenient. I got 25 balls of carrot dough. I also rolled it with wet hands. I didn’t grease the parchment; the finished cookies came off immediately. Bake for exactly 25 minutes. During this time, a light crust formed. The cookies turned out very soft, fluffy, porous. Easily cut in half, I spread butter and sour cream on the halves) Very similar to gingerbread cookies if covered with glaze. The taste of carrots is not felt at all, the sweetness is also minimal. I think these cookies are great for breakfast and snacking. Thanks for the recipe!

I couldn’t resist and made these delicious cookies! Thanks to the Author for the recipe! The dough is kneaded quickly and easily! The cookies taste like carrot cakes to me. I will definitely cook again! Just next time I’ll make the balls smaller and hide the nut inside. The taste of walnuts is perfect for cookies. Great combination! I pre-roasted the nuts in a dry frying pan to make them more flavorful. I added to the recipe by sprinkling the cookies with powdered sugar.

A new take on a favorite recipe: instead of walnuts, I tried covering some of the cookies with vanilla glaze! It turns out delicious too. Let's bake again!
