STEP 1
How to make Greek kataifi dough? Prepare your food. Sift flour into a bowl, mix it with salt. Pour in water in portions, thoroughly stirring the mixture each time with a whisk. Then beat the eggs into the dough and stir until completely smooth. You should end up with a fairly runny batter, about the same consistency as pancakes.
STEP 2
Pour the dough into a pastry bag. It is necessary that the hole is minimal and the stream of dough is accordingly very thin. If you do not have such a bag, then use a thick bag instead, cutting off the very tip.
STEP 3
Heat the frying pan over medium heat, no need to grease it with anything. Apply strings of dough onto the pan with quick movements and hold them for literally 5-7 seconds. As soon as it can be picked up with a spatula, immediately remove it and apply the next batch. The most convenient way to do this is in a non-stick frying pan.
STEP 4
Place the finished dough on a large baking sheet. Its structure is similar to half-baked pasta. There is a lot of dough. Store the dough in the freezer, first wrapped in parchment and then in a bag. Or cook from it immediately without freezing. Defrost frozen dough using the same technology as puff pastry. You can store it in the freezer for up to six months.
