    How to make grated cookies? Prepare your food. The butter should be softened, so remove it from the refrigerator in advance. Transfer the butter to a bowl, add sugar and beat with a mixer until smooth.

    Add eggs and salt to the resulting mass. Continue whisking further. Add a glass of flour. Mix everything.

    Quench the soda with lemon juice and pour into the dough.

    Add the rest of the flour and knead the dough. Focus not on the volume of flour, but on the thickness of the dough, because each time you need more or less flour than the grams indicated in the composition. The dough should ultimately be non-sticky, viscous, pliable, and non-flowing. And most importantly, it should roll out well and keep its shape.

    Wrap 1/3 of the dough in film and put it in the freezer for 15 minutes so that it becomes hard and easier to grate.

    Roll out the rest of the dough on the table into a layer 1 cm thick. You should get a rectangle about 20 by 30 cm. To prevent the dough from sticking to the surface, use a special mat or an immediately oiled sheet of parchment.

    Trim the edges of the rolled out cake evenly. Transfer to parchment paper if you haven't done so already. Then onto a baking sheet.

    Spread jam over the dough. Mine is black currant. It goes very well with this dough. You can take plum, apricot, seedless. If your jam is a bit liquid, you can pre-mix it with semolina, flour or boil it with starch. I didn't do this.

    Remove a third of the dough from the freezer and grate it.

    Place the grated dough on top of the jam. Place the baking sheet in an oven preheated to 180 degrees for 25 minutes. Focus on the features of your oven - it may take you more or less time than mine.

    Remove the finished pie from the oven. I immediately cut it into cookie squares while it was hot. Bon appetit!

Thanks to the Author for the recipe! I made a double batch at once because I know how delicious these cookies are! The dough is easy to knead and very easy to roll out. It is better to take a filling that is not too sweet; light sourness and sweet dough go better together for my taste. I have a mixture of blackcurrant jam and grated plums. We will definitely bake again!

I baked these cookies according to your recipe, but instead of butter I added margarine. It turned out to be a very tasty shortbread cookie. I only took strawberry jam, so the colors are not as bright as yours.
