    How to fry eggplants with bell peppers and garlic? Prepare your food. The number of eggplants depends on their size, I took three small ones, if the fruits are medium, then take two. Wash all vegetables, peel onions, carrots and garlic.

    Cut the onion into half rings. You shouldn’t chop it up - a dish with large pieces will turn out both more beautiful and tastier.

    Cut the carrots into slices.

    Remove the core and seeds from the pepper and cut the pulp into thick strips.

    Cut off the tail of the eggplant. First cut the fruits into plates, then into strips. Please note that in some cases there is no need to remove bitterness from eggplants - usually young vegetables, as well as some special varieties, are not bitter.

    Heat a frying pan over medium heat, pour vegetable oil into it for frying. Add onions and carrots. Fry them, stirring, for a couple of minutes until softened.

    Place bell peppers in the pan. Fry everything together, stirring, for another 3-4 minutes.

    Then throw in the eggplants and a finely chopped clove of garlic. Stir. The eggplants will immediately absorb all the remaining oil.

    Pour some hot water or broth into the pan. Reduce heat and cover the pan with a lid. Simmer the vegetables for 5-7 minutes until the eggplant is soft.

    Salt and pepper the contents, add chopped herbs (I used parsley, cilantro works well). Stir and heat the dish for a couple more minutes.
