    How to make stuffed flatbreads in a frying pan? Let's start by preparing the dough. We will make unleavened dough, without yeast, using kefir. Pour warm kefir into a bowl; you can heat it in the microwave for a few seconds, or simply remove it from the refrigerator in advance.

    Beat in a chicken egg, pour in a couple of tablespoons of vegetable oil, add a pinch of salt and baking powder. Mix all ingredients thoroughly.

    Pour in the sifted wheat flour, in parts, stirring the dough with a spoon each time. Then place the dough on a floured work surface. Knead elastic smooth dough.

Add a tablespoon of sour cream, salt and ground black pepper to taste, mix thoroughly.

I wanted to cook flatbreads with filling in a frying pan, but I didn’t go to the store to buy cheese for the filling; I used the salted cottage cheese with herbs that was in the refrigerator. I wanted to try this version of the dough more and not focus on the filling (out of the six flatbreads I got, I made only four with filling). At first it seemed to me that the ingredients suggested too much flour. But kefir dough is usually capricious; kneading “elastic, smooth dough” with a small amount of flour is quite problematic. I added the first two glasses boldly during kneading, the third glass of flour - little by little, leaving a small amount on the dusty surface of the work surface. As a result, the dough became smooth and elastic only after proofing. It became obedient, did not stick to your hands, but required dusting the work surface with flour when working with it. The density of the dough is just right for molding it into flat cakes with filling - it is not too soft, does not tear when rolled out, and can withstand the filling. But for flatbreads without filling, it is still worth adding much less flour so that the finished flatbreads are more tender inside. The flatbreads tasted great, my husband and son praised them, they really love these types of baked goods! Thanks for the recipe!
