    Add sifted wheat flour to the bowl with the liquid mixture. Add it in parts, stirring the dough; you don’t need to pour all the flour into the bowl at once.     The dough turns out sticky and soft. You don’t need to knead it with your hands for a long time; the main task is to gather the dough into a lump. Cover the bowl with the dough with a towel and leave to “rest” for 20 minutes on the table.

    Meanwhile, prepare the filling for the tortillas. It is better to use natural, full-fat cottage cheese and always fresh. Rub it through a sieve or punch it with a blender, it should be uniform in consistency, large grains of cottage cheese will not allow you to roll out the flatbread with filling thinly and can tear the dough.

    For the filling, as a rule, fresh onions, dill and parsley are used; the composition of the greens can be changed to taste. In winter, you can use frozen greens; this does not affect the taste of the cakes. Wash the greens, dry and finely chop with a knife.

    Combine cottage cheese with herbs in a bowl, add salt and ground black pepper to taste, mix the ingredients until a curd mass is obtained. Divide the filling into 4 equal parts for the flatbreads.

I suddenly had several kilograms of homemade cottage cheese. The sweet cheesecakes and casseroles were no longer enough, so I started looking for a recipe for unsweetened use for cottage cheese. I found two recipes for making flatbreads with cottage cheese, but settled on this one. The advantage was that the dough is prepared not with water, but with kefir. In my opinion, this dough is more tasty and soft than just one made with water. Imagining the taste of the finished dish, I prepared a double portion at once. From it I got 6 flat cakes, which I cooked in a 22 cm frying pan (bottom size). The dough is very plastic, rolls out well and does not tear, so you can make more cakes, but smaller in diameter. In addition to the usual greens - dill and parsley, I added a few sprigs of basil. Its aroma had a positive effect on the taste of the finished flatbreads. By the way, I cooked them over low heat, slowly. The dough was baked perfectly right down to the filling. The cakes even puffed up while baking. Overall, I and my family were pleasantly pleased with the taste of the flatbreads. They went perfectly with the first course for lunch, instead of bread. I definitely recommend this recipe!
