STEP 1

How to fry kefir flatbreads with cottage cheese and herbs in a frying pan? Prepare the ingredients according to the list. You can use kefir that is not very fresh; fermented kefir will make the dough even better. Sift the flour through a sieve to saturate it with oxygen. Thanks to this, the finished cakes will be more tender.
STEP 2

Kefir should be warm, it should be removed from the refrigerator in advance and left on the table for a couple of hours, or warmed up a little. Add baking soda and salt to a bowl with kefir, stir to make the reaction happen faster. Bubbles should appear on the surface of the kefir.
STEP 3

Add sifted wheat flour to the bowl with the liquid mixture. Add it in parts, stirring the dough; you don’t need to pour all the flour into the bowl at once. STEP 4

The dough turns out sticky and soft. You don’t need to knead it with your hands for a long time; the main task is to gather the dough into a lump. Cover the bowl with the dough with a towel and leave to “rest” for 20 minutes on the table.
STEP 5

Meanwhile, prepare the filling for the tortillas. It is better to use natural, full-fat cottage cheese and always fresh. Rub it through a sieve or punch it with a blender, it should be uniform in consistency, large grains of cottage cheese will not allow you to roll out the flatbread with filling thinly and can tear the dough.
STEP 6

For the filling, as a rule, fresh onions, dill and parsley are used; the composition of the greens can be changed to taste. In winter, you can use frozen greens; this does not affect the taste of the cakes. Wash the greens, dry and finely chop with a knife.
STEP 7

Combine cottage cheese with herbs in a bowl, add salt and ground black pepper to taste, mix the ingredients until a curd mass is obtained. Divide the filling into 4 equal parts for the flatbreads.
STEP 8

Divide the “rested” dough into 4 equal parts.
STEP 9

Roll each of them into a thin round layer. Place one piece of curd filling in the center.
STEP 10

Seal the edges of the dough together to form a ball of filling, press the ball slightly with your hand and sprinkle flour on both sides.
STEP 11

Roll the ball with a rolling pin into a thin cake.
STEP 12

In a dry frying pan, fry the tortilla for about 3 minutes on each side over medium heat. The exact time depends on the operating characteristics of your stove. Keep the tortillas in the pan until golden brown. If the tortillas begin to swell, prick them a few times with a fork. To ensure the filling in the flatbread is baked, cover the pan with a lid.
STEP 13

Remove the tortillas from the pan and immediately brush with butter on both sides so that the tortillas become soft and tender to the taste. Bon appetit!
