    How to make Fiesta salad with chicken and pickled mushrooms? Prepare your ingredients. You can take a whole chicken breast or one already cut into fillets, it doesn’t matter. My mushrooms are marinated (champignons), but fresh ones will do, they will need to be fried. Boil the eggs first. Place the pineapples in a sieve to drain excess liquid.

    First, cook the chicken. For this salad, the chicken can be boiled in water, steamed, or fried, but I like it baked best. How to bake chicken? Salt and pepper the chicken breast, add your favorite spices (I keep it simple - paprika and dried basil) and a couple of tablespoons of olive oil. Coat the chicken with all this, then wrap it in foil.

    Bake the breast until done (at 180°C for about 30 minutes, depending on the size of the breast), the main thing is not to dry it out! I check readiness this way: I pierce the breast in the thickest place with a thin knife or skewer. Clear juice flows - that’s it, the chicken is ready, you can take it out of the oven. Cool it down.

    To make the chicken cool faster, I cut it into small pieces while still hot (remove the skin).

    Now you can start slicing. Cut the mushrooms into slices and the onions into cubes. Mix onions with mushrooms.

    Peel the cucumber and cut into cubes. The peel, if it is not rough, damaged or bitter, does not need to be cut off.

    Boil the eggs hard. How to hard boil eggs? To prevent eggs from cracking during cooking, place them in cold water and cook over low heat. Boil the eggs for 9 minutes after boiling, then cover with cold water and cool. The shell will be better cleaned from a sharp temperature change. Separate the yolks from the whites. Cut the whites into cubes, leave the yolk, it will be used for decoration.

    I made the salad in portions, so I laid everything out in layers, but this salad won’t be any worse if all the ingredients are chopped and mixed together. So, the first layer is chicken, compact it well and grease it with mayonnaise (you need very little mayonnaise, due to the pineapples, cucumber, and mushrooms, the salad itself is already juicy.)

    The second layer is egg white, and again a little mayonnaise.

    The third layer is pineapples (do not add mayonnaise). If you have rings, then first cut them into pieces.
