Eggplants with minced meat and adjika sauce

STEP 1
To prepare delicious stuffed eggplants, we prepare the ingredients and necessary spices.
STEP 2
Cut one eggplant lengthwise into two parts, after removing its stem.
STEP 3
We make transverse cuts on each half of the eggplant, not all the way through, and cut them into several small pieces.
STEP 4
Pour the prepared mixture of one egg white, half a teaspoon of ginger, half a teaspoon of starch and one teaspoon of soy sauce into a plate with minced meat.
STEP 5
Add salt and a mixture of peppers to taste to the plate with minced meat and stir until smooth, set aside to soak in the aroma of spices for ten to fifteen minutes.
STEP 6
As soon as the minced meat is saturated with spices, slowly generously fill each cut made in the eggplant with it.
STEP 7
The result was a kind of “hedgehog snails” made from eggplants filled with minced meat.
STEP 8
Carefully bread each piece of eggplant richly filled with minced meat in flour.
STEP 9
Place the eggplants in a frying pan, which has been heated with vegetable oil added to it and begin to fry at a fairly high temperature.
STEP 10
Fry the eggplants until golden brown on each side.
STEP 11
Add homemade adjika to the pan, distribute it evenly, then close the pan with a lid and simmer the eggplants over low heat for another ten minutes.
STEP 12
