Cut the garlic into slices or grind through a press.

    Cut the sweet bell pepper into strips or cubes. The color of the pepper does not matter - it can be green, red, or orange, as in this case. If the peppers are of different colors, the preparation will be more colorful.

    Cut the tomatoes in half or smaller if you have large tomatoes, place them in a blender bowl and grind until pureed. If you want, leave some in small pieces so that the texture of the tomatoes in the preparation is visible.

    Pour sunflower oil into the frying pan, heat it and add randomly chopped onions, simmer until transparent so that all the onion aroma is transferred to the oil. I wanted to make eggplant caviar, but not for winter, but to eat now. I liked this recipe. Having all the ingredients at hand, I decided to cook. I immediately increased the quantity of products to have more caviar. I washed and dried all the vegetables, peeled them and chopped them as described in the recipe. I grated the tomatoes on a coarse grater, removing the skin. I fried everything one by one, as the author writes. At the end, I poured chopped tomatoes over the fried vegetables, added sweet peppers and garlic. Simmer covered over low heat until cooked through. From the spices I added salt and freshly ground pepper. I added a little more hot capsicum of my own. Eggplant caviar in a frying pan turned out incredibly tasty and aromatic. It's completely easy to prepare and quite quick. The vegetables did not turn into porridge, but remained in small pieces, which looks very appetizing. We devoured this caviar on both cheeks with cutlets, and with bread, and just like that. Great recipe! I will cook this recipe more than once and recommend it to everyone.
