STEP 1

STEP 2
Wash all vegetables thoroughly in running water, remove peels and seeds from those that need to be peeled, and dry. Cut the eggplants into small cubes; the skin of the eggplants can also be removed either completely or partially - I usually peel it in strips. Cut the onion into cubes or any other convenient way. Cut the garlic into slices or grind through a press.
STEP 3
Cut the sweet bell pepper into strips or cubes. The color of the pepper does not matter - it can be green, red, or orange, as in this case. If the peppers are of different colors, the preparation will be more colorful.
STEP 4
Cut the tomatoes in half or smaller if you have large tomatoes, place them in a blender bowl and grind until pureed. If you want, leave some in small pieces so that the texture of the tomatoes in the preparation is visible.
STEP 5
Pour sunflower oil into the frying pan, heat it and add randomly chopped onions, simmer until transparent so that all the onion aroma is transferred to the oil. There is no need to fry onions until crispy - fried onions are very carcinogenic, therefore, no matter how much you love fried ones, it is better to stop yourself in time. STEP 6
Add the eggplant cubes to the pan and continue to lightly fry over medium heat while stirring constantly.
STEP 7
So add the entire portion of prepared eggplants and lightly fry.
STEP 8
Next, add the chopped peppers to the frying pan, stir, and simmer everything together for a little while.
STEP 9
Now add the chopped tomatoes to the frying pan and simmer everything together until done.
STEP 10
At the very end of frying, add chopped garlic, spices, salt and sugar. Try the caviar, add salt or sugar to your taste. You can serve caviar from eggplants and tomatoes fried in a frying pan directly to the table, or you can put it in sterile jars and screw on the boiled lids and leave the preparation for the winter.
