STEP 1

How to make an egg spring roll appetizer? Prepare all the necessary ingredients. Mayonnaise can be used either purchased or homemade. Recipes for homemade mayonnaise can be found at the end of the recipe.
STEP 2

Combine the eggs with mayonnaise and mix with a whisk until smooth. If the mayonnaise is unsalted, you can add a pinch of salt. I didn't add salt.
STEP 3

You should get a homogeneous dough, like for pancakes: not too liquid, but not viscous.
STEP 4

Heat vegetable oil in a frying pan. Read about how to choose the perfect frying pan, as well as how to choose oil, at the end of the recipe. Using a ladle, pour some of the egg-mayonnaise mixture into the frying pan. Fry the pancake for about 3-4 minutes on each side. The exact time depends on the thickness of the pancake, the selected frying pan and the operating characteristics of your stove.
STEP 5

Transfer the finished pancake to a plate and cool. Fry all the other pancakes, greasing the pan with vegetable oil each time.
STEP 6

Prepare the necessary ingredients for the filling. Choose processed cheese like Druzhba, Yantar, etc. Buy quality crab sticks. Read about choosing crab sticks at the end of the recipe.
STEP 7

Remove the crab sticks from the film and finely chop or grate on a coarse grater.
STEP 8

Grate the processed cheese on a coarse grater. To make it more convenient to grate, you can first put the cheese in the freezer for 20-30 minutes.
STEP 9

Wash the dill, dry and finely chop.
STEP 10

In a bowl, combine crab sticks, processed cheese, pressed garlic, chopped dill and mayonnaise.
STEP 11

Mix everything thoroughly. The filling is ready.
STEP 12

Grease each pancake with filling.
STEP 13

Roll the pancakes into tight rolls. Place the prepared rolls in the refrigerator for 1 hour.
STEP 14

Before serving, cut the rolls into slices, place on a plate and garnish with herbs. Bon appetit!
